Veggies and Clouds

Have I told you all lately how much I love Trader Joe’s? I’ve discovered that on certain days, the fastest route home from work passes right by the Trader Joe’s, so I stop. I stocked up today on raw almond snack packs (the extra plastic for the wrappers is worth it for the portion control!), crunchy almond butter, some frozen veggies, chicken sausages, and some other various random food items to fill in the holes from yesterday’s shopping trip.

I came home all excited to make a recent favorite recipe even better! Ok, better isn’t the right word because well, the tomato sauce with butter and onions is hard to bead, but I felt the need to doctor it up and make it a bit heartier.

The basic recipe, in case you forgot:

Tomato Sauce with Butter and Onions
Adapted from Marcela Hazan’s
Essentials of Italian Cooking

28 ounces (800 grams) whole peeled tomatoes from a can
5 tablespoons (70 grams) unsalted butter
1 medium-sized yellow onion, peeled and halved
Salt to taste

Put the tomatoes, onion and butter in a heavy saucepan (it fit just right in a 3-quart) over medium heat. Bring the sauce to a simmer then lower the heat to keep the sauce at a slow, steady simmer for about 45 minutes, or until droplets of fat float free of the tomatoes. Stir occasionally, crushing the tomatoes against the side of the pot with a wooden spoon. Remove from heat, discard the onion, add salt to taste and keep warm while you prepare your pasta.

I added to the pot one bag of TJ’s “Melange a Trois” tri-colored peppers, and let it simmer all together, stirring occasionally until the peppers started to fall apart and the onion was just about mush. In a separate pan, I sauteed 2 links of TJ’s Sweet Pesto Chicken Sausage with a chopped up zucchini and about 6 sliced mushrooms. Then, I served the sauce and sausage mixture atop a twice-roasted spaghetti squash half. I roasted a spaghetti squash yesterday, and only used half, so today, I threw the remaining half back in the oven and let it kind of caramelize while the sauce cooked. It added a depth of flavor that was really delicious… I’ll have to start double-roasting it all the time now!

After dinner, for some strange reason, I had the desire to bake. I’m NOT a great baker, as I’ve said many times before, but sometimes I like doing it. It also gives me an excuse to use my stand mixer! Today I felt like meringues. Well, to be honest, I wanted lemon meringue pie, but since I didn’t have the stuff to make lemon curd, I settled for making some coconut meringue cookies.

I looked up a few recipes, and got the general idea of how it’s done, and then decided to just wing it. I needed sugar free, I wanted coconut, I had eggs… so I went for it.

Coconut Cloud Cookies

Makes about 16

Ingredients

5 egg whites, brought to room temperature

4 packets Splenda (feel free to substitute with 1/4 c. sugar)

1/2 c. unsweetened coconut flakes

Directions

Make sure your bowl, beaters, and any surfaces are completely oil free. Pre-heat the oven to 200*. Add the egg whites to a mixer bowl and beat on medium heat until soft peaks form. Add the Splenda (or sugar) slowly, and beat until whites hold firm peaks. Fold in the coconut, and then either pipe or spoon onto a parchment lined (or not) baking pan, and bake until lightly browned, dry and move easily off the pan.

These hit that spot… you know, the “I want something sweet but not that sweet” spot. And they’re crunchy. And not terrible for me!

I got another anonymous question today after tweeting about how yesterday’s post must’ve been boring. It wasn’t so much a question as yet another rude statement about how my blog “used to be great” and now is “boring” and all I do is sell stuff you could get at “bed bath and beyond.” So please, lovely readers, be honest with me… have I gotten boring? Am I stale in my “old age”? What do you want to see more of? Less of?

Locavore

It has been quite a long week, and I’m beyond thrilled that tomorrow is Friday! We have a no-students-present institute day, which are always fun. Not that I don’t love my students, but sometimes it’s nice to hang out with adults.

Sometimes, I’ll spend some time up in the main office at work and chat with our assistant principals about various issues with students, or sometimes we chat about nothing. And sometimes, we find out that we have a lot more in common than we originally thought! Yesterday, one assistant principal was in her office eating the most delicious-looking salad out of a recyclable paper box, much like the ones used at Whole Foods. I got very excited and asked her where exactly near school she’d gotten such a fantastic-looking salad. She informed me, quite giddily, that an old restaurant/bar had been bought out and converted from a typical pub into a local/sustainable and mostly organic restaurant! We then talked food and restaurants for quite some time, and she insisted that I try Duke’s Alehouse and Kitchen ASAP.

Luckily tonight, I had quite some time to kill! After school and a meeting, I had about 4 hours of free time before I got to be a judge at the regional spelling bee. I went to the DMV to get my name changed on my license, did the same at the bank, and then headed to Duke’s for an early dinner.

I was greeted by a friendly bartender who was more than happy to tell me about their menu, specials, and seemed very knowledgeable about why their menu was different than other places.

I’d perused the menu online, and had made up my mind that I would be getting a tallgrass beef burger, without the bun, for my dinner. To say that it delighted me when Robert (I think that was his name?) the bartender informed me that their cheese choices were: 4-year aged cheddar, blue, gouda, mozzarella, feta, oh…and goat. Yes, goat cheese. Amazing fresh and soft local goat cheese. Oh, and organic broccolini (not local, as its a frozen tundra here right now.) Apparently, up in the county where my school is, there are dozens of small farms… some are more famous (Kinnickinnick and Saluté) but most I’d never heard of.

The bottom of the menu reads “I want my farmer to be paid well, for the same reason I want my airline pilot to be.” I love it! I read that menu while I waited for my food, and loved the pride the place has in supporting local and organic farmers. So many restaurants like this are out of reach for Adam and I, as they’re downtown Chicago and price-prohibitive. This however, is the opposite! It’s relatively inexpensive (my burger was $10.50) and in the lovely suburb where my school is.

My food arrived quickly, and to say it was beautiful is an understatement:

And the burger, on its soft pretzel bun with bibb lettuce, roma tomatoes, and soft fresh goat cheese… notice how that patty is uneven and not round. That means a PERSON actually made that patty, and stood there while it cooked:

To say that it pained me to take that burger off that beautiful bun is an understatement as well. I can only imagine how phenomenal it tasted… it sure smelled good. I looked like a freak, sitting by myself at a bar table, sniffing a pretzel roll and tweeting about how excited I was to eat this burger. Oh, and taking pictures of everything while the locals were sitting there wondering why their kids’ Spanish teacher was photographing her food.

You know what this burger tasted like? It tasted like meat. It tasted the way, when you want a good burger, that a good burger should taste. So much of the ground beef that I buy is fairly tasteless on its own and needs loads of seasoning. I’m willing to bet that this burger had a sprinkle of salt and pepper and that’s it. Next time I go, I’m certainly trying the organic steak, as well as making sure that I have someone else to order a dessert so I can have a bite. Something about a “trio of artisanal brownies” and “build your own cupcake” are quite intriguing.

With a pleasantly full belly, I went to judge the spelling bee, and then headed home. I was greeted with a bubble-pack envelope with a Canadian customs label on it. I immediately knew what it was and tore right in! The amazing Marianne from the blog From French Fries To Flax Seeds had sent me an Olympic care package!! There was a pair of the official red Olympic mittens, and a pin that says “Eh!” from Lululemon! (please excuse the ratty nails and tired face).

What are you and Adam doing for V-Day? I think we’re staying in, drinking some wine, and I’m making cheese fondue… with bread. V-day is one holiday that I feel it necessary to splurge no matter what. And you know? That’s ok! ONE day of splurging and eating bread will not make me lose all the progress I’ve made!

Tomorrow evening, we are off to O’Hare to pick up my mom and stepdad from their trip to Mexico. We’ve been watching this adorable face all week… Stella the Goldendoodle!

Local Support (Giveaway Post)

Slow Day, Slow Dinner (Giveaway Post)

Did anyone else have the LONGEST monday ever? I woke up in a daze, much like the one that comes after other big events…so much of yesterday was a blur, and I woke up wondering if it really happened! The kids were nutty, I had a headache, and my classroom was so cold that by the end of the day, I couldn’t feel my toes!

All I wanted to eat was something hot. Like, cooked for a long time, comforting and hot. Lucky for me, Adam called FROM the grocery store wondering what he could get for me so I could cook dinner! I gave him a list, and next thing I know, he’s walking in the door with enough food for a few dinners!

I got to work and made something very nostalgic for me: Mom’s Chicken Stew. There was a long period of time in my growing up where no one in our house ate red meat, so my mom would make chicken stew instead of beef, and it’s something I crave every fall and winter.

All measurements are approximate, as I just kind of threw things in!

Mom’s Chicken Stew

Ingredients

4 or 5 medium chicken breasts cut into chunks
1 large onion, cut into chunks
4 ribs celery, cut into chunks
5 small or medium russet potatoes, cut into chunks
1 bottle dry red wine
1 box chicken broth (I used Progresso)
1/4 c. flour
3 cloves garlic, minced
2 Tbsp. olive oil
3/4 c. ketchup
PATIENCE

Directions
In a large pot, heat the olive oil with the garlic. Add the onions. Cook until softened, and then lightly dredge the chicken in flour and add to the pot. Add the celery. Cook until chicken is lightly browned and the celery and onions are soft. Add the whole bottle of red wine. Simmer slowly until reduced by half, or about an hour. Add remaining ingredients, and simmer slowly for another hour. Serve and enjoy.

I cannot believe it’s been a year already. I’ve met some of the most amazing people, both virtually and in real life, and had wonderful experiences, fun times, and great food.

Slow Down & Savor (Giveaway Post)

It’s finally starting to really feel like fall here in Chicagoland… the leaves are starting to change, and there’s a cool breeze in the evenings that almost requires a light jacket. There are quite a few dishes that will eternally remind me of fall: warm homemade applesauce, prune plum compote, Italian pot roast, and Neapolitan casserole. Most of those dishes, well, with the exception of the pot roast, were things that my mom would cook in the first few weeks of school, usually right around the Jewish High Holidays.

The only thing with these recipes is that they take a long time to cook. They require patience, low heat, and generally a slow pace. There’s nothing quite like any of them, and you’ll see all of them here soon. But tonight, I had the insane fall craving for the Neapolitan casserole. This recipe dates back to the 1940s from a cookbook by Antoinette and Francois Pope called The Antoinette Pope School Cookbook. I wish I had a copy of it, but I do have this one recipe that I begged my mom for years ago. I’ve adapted it to be a bit healthier, and of course omitted mushrooms for Adam.

Healthified Antoinette Pope Neapolitan Casserole

Adapted from The Antoinette Pope School Cookbook

1 lb. ground beef or turkey

1 lb. whole wheat pasta, cooked and kept hot

1 6 oz. can tomato paste

5-6 strips bacon, cut into small pieces

1 green pepper, diced

1 sweet onion, diced

parmesan cheese

1 tsp. oregano

1 tsp. baking soda

2 c. water

1 tsp. garlic powder

Directions

Preheat oven to 350*. Heat a large frying pan and add the pieces of bacon. Cook until crispy, and add the onion and peppers. Cook until onions are transluscent and peppers are softened. Add the ground beef or turkey. Cook until meat is cooked through. In a casserole dish, put 1/3 of the cooked pasta, 1/2 the meat, and a generous sprinkle of parmesan. Repeat with another third of the pasta, the rest of the meat, and more parmesan. End with the pasta. In a separate vessel, mix together the tomato paste, water, and baking soda. Be careful, as it will froth up! Pour the tomato mixture on top of the meat and noodles and bake for about 25 minutes. Top each serving with parmesan cheese and enjoy!

This brings back a taste of childhood and fall for me…and I was thrilled to eat it tonight! Something about the chopping and sauteeing and baking and waiting that was so comforting.

Just a Sprinkling… (Giveaway Post!)

After years (literally, 3.5 years) of counting Weight Watchers Points®, this past week, I decided I’d had it. I spent one last week counting to the best of my ability while I researched other possible eating plans. While I know that I *should* attempt the whole intuitive eating thing, my intuition would lead me to chicken fingers, burgers, and french fries at this point.

After asking some advice from trusted sources, I picked up One Week in the Zone by Dr. Barry Sears since it seemed like a logical and non-counting-based eating plan. The thing in reading a good portion of the book that really stuck with me was that simple carbs were to be used like a condiment; “just a sprinkling” on each meal. My simple carb consumption had gotten out of control, and I KNOW that’s not good for me. So today, my brunch salad had a few croutons and I avoided the sugary dressing and bread. Late lunch was literally a salad on high-fiber bread with some turkey, and then dinner is something I’m quite proud of!

Rather than having a bowl full of gnocchi (which is what I wanted) with a bit of veggies, I made a bowl of veggies with a few gnocchi and some shrimp… oh, and Chavrie goat cheese, which I’ll get to in a minute.

Creamy Shrimp and Vegetables with Gnocchi

serves 6

Ingredients
1/2 lb. frozen shrimp, thawed
1 lb broccoli, cut into florets
2 red peppers, diced
1 pint grape tomatoes
4 oz. Chavrie goat cheese
1/2 tsp. dried basil
2 cloves garlic, minced
2 Tbsp. olive oil
1 pkg. gnocchi

Directions
Heat oil and garlic in a large pan. Add red peppers, broccoli, and basil and stir to combine. Cook until broccoli is done and peppers are soft, about 10 minutes. Transfer to large bowl. Add pint of tomatoes and stir well. In the same frying pan, add the shrimp and cook until thawed. Add to the bowl. Cook the gnocchi according to package directions, drain, and add to bowl. Then, add the Chavrie and stir until it’s melted and all ingredients are lightly coated. Enjoy!

I had literally, 6 gnocchi in my first serving. It didn’t even matter because the rest of it was so good, and the goat cheese added a little bit of a “gourmet” taste to something truly simple.
I’ve been a fan of goat cheese ever since I was 18 and went to Spain. They have a dish there, a hot tapas dish actually, called “queso de cabra al horno” which is baked goat cheese in tomato sauce served with chewy Spanish bread. I fell in love with it then, and eat it whenever we go out for tapas. I got adventurous with goat cheese since I started blogging, and enjoyed it here in my basil-chavrie stuffed burgers and here in my gnocchi with pesto chavrie. After these recipes, the lovely people at Chavrie contacted me and sent me coupons for FREE CHAVRIE (hey that rhymes!) The Airportista

About a week ago, while wasting time on Twitter (are you following me yet?) I got a message from Gina, a.k.a. The Fitnessista, saying that she had a 2 hour layover in Chicago on August 6 at 6:45 and could Jenn and I meet up with her? Since I would be able to make it to O’Hare by that time on that day (today, duh) I jumped at the chance! I agreed to meet her, and even though our only option would be to get coffee from a kiosk because of security, we thought it would still be fun. 200908062134.jpg

Then today, when I mentioned to my boss at camp that I had to be at the airport, he suggested that I leave a bit early so I could make it home first. I texted Gina and told her that I’d have some more time, and could I bring her dinner? When I suggested Indian, of course she agreed. She also said that The Pilot would want something a bit more hearty, so I offered to pick up food for him too.

First, I stopped at Portillo’s, a Chicago standby for Italian beef and hot dogs, and picked up a sandwich and salad for The Pilot (I’m calling him The Pilot because I can’t remember if its cool to use his name!). Then I headed to the Indian place nearest to us for food for Gina and me.

After braving the ridiculousness that is the parking garage at O’Hare, I made it into the baggage claim area and met up with Gina and Pilot! I recognized her right away, and we headed off in the baggage claim/terminal area to find a place to sit, eat, and chat. I think we all agreed that we should all live closer to each other! Unfortunately, Jenn couldn’t make it, but she was definitely missed!

I enjoyed my chicken tikka masala (a spicy Indian dish that I adore, complete with a little rice and a side of naan)

Gina had her favorite, Baigan bartha, of which I didn’t get a picture…but she did! And the Pilot completely devoured his authentic Chicago Italian beef sandwich with sweet peppers:

After thoroughly enjoying our meal on the baggage claim bench, chatting about weddings, blogging, food, and tons of other things, we took a picture in front of said bench:

Of course I had one of each as soon as I got home. Amazing!
I had so much fun meeting Gina, and I really hope we can hang out again sometime, maybe somewhere a bit more fun than Terminal 1 at O’Hare!

A day wouldn’t be complete without a camper quote of the day, but this one is a bit different as it comes to you in visual form. Today’s craft was beaded necklaces, and some of the beads were plastic letters. My friend’s camper randomly chose a bunch of beads out of the bucket and strung them on her string. Why is this a quote of the day? Well… this girl can’t read yet… and here’s what came out:

Tomorrow is Harry Potter day at camp, and I’m going as the Snitch! You know, the little golden ball with silver wings? My friend is going as a Firebolt, and another friend as a bludger. You could say we’re nearly a Quidditch set!

Just Met Hugh

Hugh Jass that is! After tweeting today that I had no idea what to cook for dinner, the lovely Sarah suggested I make a taco salad. Thought process immediately following:

  • taco salad sounds good.
  • taco salad has lots of stuff on it
  • we don’t have lots of stuff.
  • I should go to the grocery store
  • Valli is a grocery store.
  • Valli has the best guacamole in the world
  • Taco salads have guacamole!

It was then decided that since taco salads are a vehicle for guacamole, that would be dinner. So it was tweeted, and so it was done.

My Hugh Jass taco salad (would that make it Enrique Jass?) consisted of:

  • fresh romaine lettuce
  • fat free refried beans
  • low fat cheddar cheese
  • fat free sour cream
  • fresh salsa
  • fresh (world’s best!) guacamole
  • marinated chicken taco meat from Valli

It was just perfect. I ended up crumbling a few baked tortilla chips on top of the salad for a bit of crunch, which added a nice touch. I felt like I needed some veggies after the last few days of raw fish and too much alcohol!

OH and an addition to my anniversary party/blogger meet up post! I completely forgot to share the amazingly generous gift I received from my bosses in recognition of my 10 years. They got me a beautiful watch! I tried to take a picture of it on my wrist, but photographing jewelry is, I swear, ten times harder than photographing food! Week 7 of camp is going to be a fantastic one, I can already tell! With my official birthday celebrations beginning on Tuesday night, and continuing all week through next Saturday, there’s no way it can be a bad week! I still can’t believe that I’m going to be 29… I can remember being about 10 when all my friends were having their golden birthdays (turning the same age as the date of your birthday, i.e. turning 10 on the 10th) and thinking “I’m never going to get to my golden birthday. 29 is just soooooo oooolllldddd.” But here I am, in what’s sure to be one of the best years of my life!

Enough sappiness… This week will hold a trip to Chuck E. Cheese, squirt gun wars, a day at a County Fair, duckie cookies from Iowa Girl Eats, dinners out, dinners in, a camp overnighter, and bowling at a luxury bowling alley. I can’t wait!
