Honeymoon Take 2 or How Beautiful!

Did you miss Part 1, Part 2, Part 3, or Part 4?

Our honeymoon was absolutely amazing, and I can’t wait to go on another trip like that! Sandals was a beautiful resort that I’d recommend to anyone!

One of our favorite food items that we sampled while on our trip were what are called Jamaican Patties. They ranged in size from small (which they had at the resort), to HUGE (at the rest stop we went to on the way from the airport). When we got our last plate of them, Adam made a point to make them look pretty and lay them out and said “You’re going to blog this. They’re too good!” What are they? Well, this is what they look like:

The ones with the pink dots were chicken, and the others were beef. They’re a flaky pastry crust filled with a spicy meat and vegetable filling that was reminiscent of empanadas or even a fried pierogi. The pattie is a true product of local food (the filling) combined with an English turnover that migrated with the settlers in the 1500s. We absolutely loved these, and I really hope that we can find a local restaurant that serves them! It would be far too dangerous to figure out how to make them!

Honeymoon, Take 2 or We Went Chasing Waterfalls

Did you miss Part 1, Part 2 or Part 3 of our honeymoon recap? Go catch up… I’ll be here when you get back!

Now, where were we? Oh right, I had a sunburn, and after a day of pure relaxation including massages (i left that out in my Part 2!) we decided there was a need for just one more day at the beach before heading out on our scheduled excursion.

We spent Monday of our honeymoon at the beach on a pier jutting out into the Caribbean sea, soaking up rays, reading, and enjoying each others’ company. Dinner that night was an easy decision, as only 2 of the restaurants on our side of the resort were open, and we’d already been to one!

This restaurant was “Mediterranean” themed, and, much to my delight, many of the dishes on the menu featured some of the amazingly delicious and bright red tomatoes that were everywhere on this trip. First off was a trip to the “antipasto bar” which was a fantastic array of cold cheeses, salads, meats, and smoked salmon as well as a few focaccia type pizzas. I helped myself to a nice assortment:

I didn’t care for the soup that night, so I ended up with another plate of green salad instead. My entree was one of my favorites of the whole trip: a grilled filet mignon atop a potato cake with fried onions and spicy tomatoes

And, after a couple of days of trial and error, I finally found a chocolate dessert that was worthy of my chocolate-snob palate:

We finished off the evening with a “reggae” show. I say “reggae” because, well, when YOU think reggae, you usually think of this guy, right?:

When we went to the “reggae” show, the performer we got was well, a lot more like this guy:

Yeah, that’d be Carlton Banks of Fresh Prince fame. It was, though, without a doubt a very fun night! We decided to head to bed because we had quite the excursion in the morning!

At 7 a.m. Tuesday, we awoke and had a light breakfast, and by 8:30 we were aboard this gorgeous boat:

It was a large catamaran that would take us along the northern coast of Jamaica to climb Dunn’s River Falls, go snorkeling, and then on the way back, turn into a “party boat”.

We had about a 20 minute boat ride until we got to the falls, which, at first glance were beautiful:

Little did I know that climbing these 600-foot falls would be one of the scariest moments of my life! We were instructed by the tour guides to hold hands in a long line (about 15 of us) and we’d be climbing the falls together. I made it up the first level of the climb just fine, but upon reaching the 2nd level, the water fell a bit faster, the terrain was rougher, and the ground was harder to see. At one point, I was crying and yelling “This isn’t fun anymore!” BUT, after much thought about getting out and taking the stairs down, I toughed it out with Adam and we made it to the top!

I’m pretty proud of myself for doing the climb even though I didn’t feel up to it at the time, but I have to say, I don’t know if I’d do it again! Maybe I’d take the stairs…

We hung out on the party boat and relaxed, and then a group of the people went snorkeling out on the reef. I was too shaken up (regrettably) to go, but Adam went and had a ball. Upon returning to the resort, we were just hungry and tired… so we ate and napped… ah vacation…

Dinner though, was quite fun! Coincidentally, Adam’s sister and brother-in-law were on their honeymoon too at the same resort! We didn’t think we’d overlap at all, but when our trip got bumped up a few days, we had a couple days together. We all decided to do one dinner together at the resort’s fancier Asian-style restaurant.

It was definitely nice to have dinner with another couple, and great to see Riv and Alex again! We hadn’t seen them since our wedding!

Honeymoon Take 2, or This Chicken is a JERK!

Did you catch Part 1 of our honeymoon update? I’m trying to come up with more fun names for each part than “part 1″ and “part 2″, but this is most definitely part 2.

Where’d we leave off? Oh right, we’d landed in Jamaica, gotten cold drinks at the Sandals lounge, I’d changed into flip flops and we got into a bus to take the 90 minute ride to our resort. I tried to get pictures out the bus window for you all, but only managed a couple of random ones:

The bus ride was bumpy, and in Jamaica, they drive on the “wrong” side of the road, so picture-taking wasn’t faring well for my slightly travel-upset stomach. I decided to just sit back and enjoy the fact that we were finally there!

When we finally arrived at the resort, our bags were taken directly to our room, and we were asked to fill in some information on a form. We were then handed our keys and escorted to our cottage room. The resort was interestingly laid out. There were two sides: the Manor and the Riviera. The Manor was the side that had the main pool, and the Riviera side had the beach…and we were on the Riviera side! The rooms were in two main types of buildings: typical “hotel” types and the cottages. Each cottage had 4 rooms separated by hallways; two upstairs and two downstairs. I loved how tropical our room was!

We got a different towel sculpture on our bed each night, but this was my favorite. Once we got the air conditioning going, we both realized exactly how hungry we were for dinner! We quickly changed and went to the nearest and most easily accessible of the 8 restaurants in the resort. There was a little bit of a wait for a table, so we enjoyed our first piña colada and waited while watching the ocean.

Since it was 80 degrees outside, we got to eat outside by candlelight, which made for great atmosphere, but as was the case the rest of the trip, I would find, made for terrible food pictures! I had to use a flash a lot, so please excuse the über-bright pics.

The restaurant was lovely

and had a 5-course menu… but we didn’t figure out until our 3rd night that we were supposed to order one of each course for EACH of us, not to share. The appetizers were about 3 bites! We shared this shrimp spring roll:

Then Adam got soup and I got an “antipasto salad” which had one of my favorite presentations of the whole trip:

That’s onion, lettuce, eggplant, zucchini, fresh mozzarella, yellow squash, and tomato.

Adam’s entree was herb-crusted lobster with ravioli, and mine was a mini rack of lamb on ratatouille:

Both tasted quite delicious, especially in our super-hungry state! We topped off the evening with desserts. I had a piña colada cake, and adam got a pineapple upside down cake:

Then it hit us… we were exhausted! We went back to our room, and after emailing to let our families know that we’d made it, we passed out!

We awoke the next morning bright and early (8 a.m.) and went in search of breakfast. I have to say, the breakfasts were one of my favorite food things at the resort. There was a fresh fruit bar, omelet station, hot dishes, and a porridge/oatmeal bar complete with toppings. Regrettably I never got a picture of it… but trust me! It was stellar.

After breakfast our first full day, we spent most of the day outside looking at this:

And when lunch time rolled around, we were treated to a special Christmas lunch (oh right, it was Christmas day!) full of local foods, including Jerk Chicken.

That was my plate, which had (from the bottom left) jerk chicken, jerk beef roast, sweet mashed yams, chicken skewer, and this stuff called “fried festival”. It was all fantastic! Expect to see many jerk-seasoned dishes on this blog in months to come!

Dinner was delicious and served out on one of the piers on the beach. It was a Mexican/Southwestern themed restaurant, and I ordered a grilled sirloin which was cooked to perfection… but one candle on the beach didn’t make for enough light for a picture… So I’ll leave you tonight with pictures of Adam and I AT dinner on the pier:

Honeymoon, Take 2 or How We Made it to Jamaica!

After our first attempt at our honeymoon failed miserably, we set out on Thursday (Christmas eve) for our second attempt.

We awoke early at 3 a.m. to catch the cab we’d called for 3:30. When the taxi hadn’t shown up by 3:45, we were both thinking “here we go again!” but soon enough our taxi arrived. Luckily we had no bags to check, as they were already in Jamaica, and we got into the longest line for security I’ve ever seen. Again, we thought “here we go again!” but ended up making it to the gate just in time for boarding. Finally we were on our way!

A mere 2 hours later, we had landed in Charlotte, NC (home of KERF, who I promptly texted a hello!).

Our connecting flight was delayed about an hour, so we set out in search of southern breakfast. We both indulged in something that tastes waaaaay better than it looks: Biscuits and gravy.

We both thoroughly enjoyed the rocking chairs that were all over the Charlotte airport, a far cry from the line-standing and wall-sitting we’d done in the Philadelphia airport. Nothing against my Philadelphia friends, but I don’t think I ever want to fly into that city again!

We boarded our flight to Jamaica and it took off without a hitch… next thing I knew, I was seeing the Caribbean Sea out the window

And we landed on the lush green coast of Montego Bay, Jamaica! FINALLY we’d made it!

Once we went through customs and found our bags that had been on vacation for a few days already, we were whisked off to the Sandals lounge in the Montego Bay airport. There were cold drinks, air conditioned rooms, and lovely people that took care of our bags. I changed into flip flops, and soon we were on our way to Ocho Rios!

Happy New Year!

Well, Adam and I FINALLY made it to and from our amazing honeymoon in Ocho Rios, Jamaica… and while I wish we were still here:

Honeymoon, Take 1 or Why US Airways Spent Our Honeymoon Money

Some of you may be confused as to exactly why I’m posting when I’m supposed to be on my honeymoon, while some of you have been eagerly awaiting details since Saturday morning. This is a VERY LONG POST. Don’t expect a lot of food/recipes/cooking type information in this post, nor should you expect your normal “bubbly happy in-a-good-mood” Mara. I don’t think I’ve ever been so angry in my entire life, including when I lost my last teaching job due to budget cuts.

Let me rewind. Our flight for our honeymoon to Jamaica via Philadelphia was scheduled to leave O’Hare airport at 7:25 a.m. CDT on Saturday, December 19. On Friday night, upon checking the weather and seeing this:

Adam and I decided to check the status of our flight. It was still “on time” but with a “travel advisory” in Philly, which meant that we could a) move our entire itinerary up to 7 days, b) reroute through a city that didn’t have a travel advisory, or c) be refunded for our tickets. Since A and C weren’t options, we got on the phone with US Airways and were going to request a reroute. After sitting on hold for over 2 hours, we decided to “risk it” and still leave the following morning.

Saturday morning, we got in our taxi on the way to O’Hare expecting the documented 25 minute delay in our flight to Philadelphia, and we were prepared to possibly miss out on one day in Jamaica due to the snowstorm on the east coast. On a whim, Adam requested at the ticket desk to be rerouted through Charlotte where there wasn’t snow yet, and he was REFUSED. We boarded on time, then had to sit for an extra half hour while the plane was de-iced. The flight was choppy, full of crying babies, and had so much turbulence I thought I’d be sick. The pilot announced we were about 75 miles outside of Philadelphia and would be landing shortly. Then 2 minutes later he announced we’d be in a holding pattern for at least 20 minutes because Philly only had one runway plowed. Then 20 minutes later, he said it would be another 30 minutes.

We finally touched down and walked as fast as we could to get to the gate for our connecting flight (on which at least 20 people on our flight were trying to catch) only to find out it had left not 5 minutes before we got there. Why they couldn’t hold the plane for 20 people, I’ll never know. Once we found out we’d missed the plane, we were greeted with the first of many lines we’d stand in over the course of the next two days. We took a risk and went to a ticketing desk to attempt to get onto the next flight to Jamaica (at 6:15 p.m.) We managed to get on standby, and watched as the terrible snow storm got worse, yet our flight was still listed as on-time. No one at any other desks would help us get ACTUAL tickets because “they can’t control the weather” and we’d “just have to wait.”

Then the waiting started. We waited in the terminal for any information about the flight… we had a gut feeling we wouldn’t actually get to take off, but they continued to say it was an on-time flight. We were scheduled to board at 5:30 p.m. and found out at 5:15 that we had gotten seats on the flight! There were 6 available and we were the first 2 on the standby list. And at 5:20, it was announced that the airport was closing and all flights were cancelled. Oh, and by the way, since they “can’t control the weather” there would be no concessions made for hotel rooms. We made a reservation at the cheapest hotel we could find ($87) and were instructed to go to baggage claim to wait for our luggage to come off the plane.

And wait we did. We watched luggage from canceled flight after canceled flight come into the carousels, and heard announcement after announcement that “bags would not be pulled” and to “be patient and wait for your flight’s luggage”. FIVE HOURS LATER an announcement came on that said “If you were scheduled to be on an international flight, and Philly was not your final destination, you will not be receiving your bags tonight.” We were told that they didn’t have the authorization to get the bags off the plane yet. So now, Adam and I were left with our “emergency” pajamas and underwear in my carry on to last us the night, and we got in line to get a taxi to our overpriced hotel. While we waited, I called US Airways to try to get on a flight to Jamaica by Monday.

See, not all the customer service people we dealt with were apathetic and rude. The people at the Sandals resort we were going to were wonderful. We filled them in on what was happening, and they happily moved our stay from its original date up days without a complaint, fee, or problem.

Back to the story. I was on hold with US Airways to try to get to Jamaica for three hours. I dialed their number as we got in line for a taxi. Someone finally came on the phone after we were already in the taxi… which means yes, we waited for a taxi for three hours. Something we noticed while we were waiting was that the airport did nothing for those people that were stranded. There were no cots, no bottled water, and the soda machines promptly sold out of water. O’Hare always sets up cots and hands out water and snacks if/when the airport closes and people are stranded.

Once we drove through the horrendously plowed Philadelphia streets to get to our hotel one mile from the airport, the cabbie pulled into the side street that led to the hotel. It was one of those complexes with about 5 hotels, and ours was the farthest from the street. Which meant, of course, that the taxi got stuck and we had to walk 2 blocks in a blizzard up to the hotel. Cue up clumsy Mara. I fell. In the snow. Hard. I have a lovely bruise which I won’t show you…

This whole time, Adam was on the phone with the “customer service” representative at US Airways trying to get out to Jamaica. Upon telling her that we had missed our connecting flight to Jamaica in the first place, and we’d been refused a reroute she said “Why is that my problem?” and Adam promptly requested a supervisor. Finally we came to a conclusion:
  1. Since the earliest flight out to Jamaica is Thursday, December 24, we’d fly home for a couple days.
  2. The earliest flight to Chicago was Monday, December 21.
  3. We’d move our Sandals stay from Thursday to Thursday
  4. We’d move our return flight to Thursday, Dec. 31

So we were stuck in Philadelphia until Monday, but at least (so we thought) had a resolution. It then hit us that we were hungry, so we went out in search of dinner. Unfortunately, there was no restaurant or grocery store within walking distance, so our dinner on the first night of our honeymoon was:

Adam had pretzels and M&Ms, and that’s a shared bottle of water.

And we crashed.

**Are you still with me? We’re only halfway there. Stretch, get some water, and sit back down. The story gets better!**

When we woke up Sunday morning, we checked out of our one hotel and walked over to the Embassy Suites about a block away. We were greeted by pleasant faces, free coffee, and an early check-in. We promptly ordered pizza, Adam took a nap, and I watched some TV and attempted to make the best of the situation. I got on the phone with US AIrways again to try and track down our luggage and get confirmation that we wouldn’t be charged any more money for our changed flights. I was reassured that we wouldn’t, and I got the number for the Philly airport’s baggage claim office.

I was told by the baggage claim guy I talked to that, in order to get our bags, we’d need to file a claim and indicate where we wanted them to go. We had a few choices: we could have them put on our flight to Chicago (but they might not make it), we could have them shipped to us at home (but we might miss them with our flight out Thursday) or we could have them put on our flight to Jamaica and we could get them when we get there. Either way, we’d have to come in and sign a claim. So we went. And we waited for three hours only to be told by a different guy that our bags were already on their way to Jamaica and we’d just claim them when we got there.

We returned to the hotel, went swimming (see, I packed our swimsuits in my carry on in case our luggage got lost on its way to Jamaica), and ordered room service for dinner. It was some lovely food: chicken nachos to share, I got a Cobb salad, and Adam got a delicious “California sandwich” on brioche:

And, when in Philly, one must eat cream cheese… or cheesecake

When we awoke the following morning at 5 to catch our flight home, we were reassured by the fact that there was no precipitation in either Philly or Chicago (or anywhere in between) and thought we’d make it home. I had a ride all set up in Chicago, and plans for brunch with a friend. We got to the airport and found that our flight was cancelled “due to weather.” WHAT WEATHER?!?!?!?

Again, I got on the phone with US Airways while standing in line to try to get another flight out. Once I was connected (an hour later), I was told that not only was there no other flight to Chicago from Philly yesterday, the next available flight was Tuesday at 1:55 p.m. with a layover in Pittsburgh. And that because they “can’t control the weather” there would be no concessions made for a hotel stay. I asked for a supervisor, hoping that maybe they’d have access to flights that the regular reps couldn’t access (like they did Saturday night with our Jamaica flights.) I had Adam talk to the supervisor who 1) laughed at him when he asked for compensation for a hotel and 2) “messed up” when telling us that the first available flight was Tuesday. It really was Wednesday. After much discussion back and forth, we got seats on the Wednesday flight.

Then we started calculating.
  • Lunch at the airport Saturday – $20
  • Blankets for waiting in the airport – $20
  • Taxi Saturday night – $20
  • Saturday hotel – $87
  • Lunch Sunday – $24
  • Hotel Sunday night – $130
  • Dinner Sunday night – $50 (room service, ya know)

At that point, we had spent an extra $327 that was supposed to be spending money in Jamaica. Since we were supposed to be at an all-inclusive resort, we hadn’t anticipated spending anything after our second flight Saturday. Could we spend another $300 on hotels for another two nights to fly back to Chicago for ONE day, and another two days of meals out? Sure, we could. Should we have to? Absolutely not. Rather than waiting around and spending more money, we decided to do the truly crazy. We rented a car and drove from Philadelphia to Chicago. A car, actually, just like this:

Yes, we drove 12 hours (rather, Adam drove. I offered, but he wanted the “badge of honor” of driving that long). Rather than spending more of our hard-earned and hard-saved money for hotel rooms and food, we spent HALF of what we would’ve and made it home. We did add:

  • $180 for the car rental
  • $60 for 2 tanks of gas
  • $35 (or so) for food
  • GRAND TOTAL: $615

Was it crazy? Yes, absolutely. However, since we needed to not be dealing with the extremely-poorly-run Philadelphia airport anymore, and needed some real rest and relaxation, it was worth it. Not one of our meals on the road cost more than $8 total, gas was fairly affordable, and we were OUT OF PHILLY! You can see my photos from the road in this album.

The kicker of the whole situation? If that one US Airways employee hadn’t refused to reroute us on Saturday, the whole thing wouldn’t have happened. We’d be on the beach drinking fruity drinks out of coconuts right now. I don’t ever expect to see any sort of compensation from US Airways, as they have some of the most apathetic, careless, and rude employees I’ve ever encountered, and they truly didn’t care about anyone’s situation. Not to mention the fact that they refused to give us our luggage and sent it on without us. We were told that FAA regulations state that luggage can be on a different flight FOLLOWING its owners, but not ahead of it. So right now, our luggage is in Montego Bay getting a heck of a tan, while we’re back in Chicago for 2 days.

So please, keep your fingers, toes, and whatever else you can, crossed… knock on wood… find a lucky penny… our flight leaves from Chicago to Charlotte to Jamaica on Thursday morning at 6 a.m. CDT. There needs to be no weather, no snow, no NOTHING to keep us from getting to Jamaica. We need this trip, now more than ever.

Call for Help: A to Z Literacy Movement

This is not my usual food-based Friday night post… partially because I haven’t eaten yet and don’t know when I’ll be hungry, but mostly because I’m using tonight’s post to enlist your help.

I’m not a runner, nor a competitive walker, nor a cyclist, so I haven’t asked for donations for races or TnT. I am, however, a teacher, and though I teach a rather “alternative” subject (Spanish), as a teacher, my mission is the same as any other: to educate youth.

A Weekend Away (and the Post to Prove It!)

I set out Friday afternoon for my weekend in Utica, NY for my good friend Mary’s wedding… little did I know that I would proceed to eat myself stupid!

There was a serious lack of vegetables, tons of starch and homemade Italian cookies, an abundance of the most caring people, and did I mention tons of food?

I arrived late Friday night, and proceeded to stay up late getting to know my roommate-for-the-weekend, (HI SHANNON!) and going on an endless journey looking for the local Wal-Mart. I crashed out at almost 2 a.m. and awoke ready for a cup of coffee… or 5.

Shannon and I decided to forgo the hotel breakfast in favor of finding the nearest Starbucks which was supposed to be about 20 minutes away. So we drove. And the address didn’t exist! We ended up here:

It had a rural route address and, in true Diners, Drive-Ins, and Dives style, I went for the “house specialty”: corned beef hash and eggs. And toast. And potatoes.

While delicious, it was almost completely devoid of nutrition other than protein. After saying goodbye to this guy

we went off in search of a farmstand that was listed on the Diner’s placemat in search of produce. I regret not taking pictures of the name of the stand because it was SO beautiful! Just look at all these goodies:

We bought some peaches and yellow plums, and drooled over the cinnamon rolls as big as our heads, and then headed back to get ready. We headed to the church, and before I knew it, my friend of 25 years was married!

They were serenaded off to the sounds of a full brass band, which I think was the coolest thing ever!

After killing a couple hours, it was time for the reception! It was at a beautiful golf club, and again, the music was amazing. And speaking of amazing… the food… oh my the food…

From top left: green salad with balsamic vinaigrette; amaretto stone sour; plate with pomodoro pasta, eggplant parmesan, and meatballs; plate with chicken francese, Utica Greens and roasted potatoes; chocolate cannoli cake and mini eclair; plate of mini desserts that I honestly can’t remember the names of.

Expect to see those Utica greens here again because they were SO GOOD! I took a picture with my friend and her husband:

We headed back to the hotel, and started getting ready for the trip back. I flew out of New York and landed in Philadelphia and immediately went in search of vegetables. I got a HUGE box of cucumber, tomato, dill and greens and a California roll… and all was right in the world (and my belly)

I awoke this morning after getting in late completely excited… I was meeting up with someone who I’ve wanted to meet for a LONG time. Any guesses?

I picked her up where she was staying and we drove to the Heartland Cafe , an old favorite formerly vegetarian restaurant. Heather was absolutely as wonderful and down-to-earth as she seems on her blog. I swear, we could’ve talked for hours more… but alas, the time was short after we got our food. I got a vegetarian chili, avocado and jack cheese omelet with beautiful whole wheat biscuits:

We headed out, I dropped her off, and I went off to my bi-weekly nail appointment. It’s another foodie day here, as we’re celebrating my sister’s birthday tonight at The Publican restaurant in Chicago. I’m still recovering from my lack of vegetables this weekend, so I MUST get at least something green tonight.
