I Heart Whole Foods

After work today, I had to drive out to my mom’s office for some wedding related stuff. My mom’s office is in a suburb which is right near the day camp that I work at all summer. This suburb has all sorts of wonderful things in it that we don’t yet have out here in chain-restaurant-ville… but most importantly, it has a HUGE and GORGEOUS Whole Foods!

This specific whole foods has not one, not two, but THREE enormous salad and hot bars, everything is constantly refreshed and it has, by far, the BEST selection of different foods I’ve ever seen at any Whole Foods. I haven’t had Whole Foods hot bar in months, and when I realized that my route home from my mom’s office would take me RIGHT past this mecca of food goodness, I knew what dinner was going to be.

I noticed immediately that the store had been rearranged because just to the left of the door was a wall of bars. Every single kind of bar I’ve ever wanted to try was sitting there, beckoning… I managed to restrain myself:

Then I perused the hot and cold bars for a while. I thought and thought, and eventually decided on what dinner would be. I didn’t want a ridiculous conglomeration of odd foods, but I wanted some variety.

I decided on a spicy tuna roll from the sushi bar, which I thought was brown rice, but alas, it was not. Still delicious!

I’m quite satisfied. There’s a little bit of hummus and mushrooms left, and I’m trying to decide whether or not to save it for later or eat it now! there’s some pumpkin ice cream in the freezer calling my name…

Sushi Bender

I have been looking forward to dinner tonight for about two weeks now. Why? Well, for the first time since our insane dinner at Tru, I got to hang out with Jenn, a.k.a. EatingBender! We talk fairly often, and have been planning a “suburban evening” for some time now.

So tonight was the night! I picked Jenn up at the train station (luckily, Chicago and its surrounding areas have amazing public transportation!) and we pretty much made a beeline for my absolute favorite sushi place, Daruma. I’m always so excited to bring anyone there because the food is so great, but I was beyond excited to bring Jenn. This would make time number 3 that Jenn and I have had sushi together, and I really think this was the best. Granted, I’m biased because I love the place, but you can judge by checking this post and this post. The meal tonight trumps them all!

Jenn was awesome, and totally went with my suggestions… so we started with agedashi tofu. It’s a lightly tempura fried piece of soft tofu in a mushroom-soy broth

Then continued with four of my absolute favorite rolls. On the top left is a special spicy tuna called “harumaki” with 2 kinds of spicy sauce, scallions, and fresh tuna. On the right is the crazy roll, full of salmon, tuna, yellowtail, cucumber, avocado, masago (fish eggs) and spicy sauce. On the lower left is the caterpillar roll with eel and egg, then topped with avocado.

Then, the best roll came. I believe I described this roll to Jenn as the “holy grail of all rolls that are sushi.” This roll is a tempura shrimp with spicy sauce rolled up in rice, then topped with tempura crunch, dried seaweed, and eel sauce (like teriyaki). It Is. So. Good.

Oh, and sesame seeds. I forgot the sesame seeds. I swear, I could eat nothing but this roll every day and be happy. Well, this one and crazy rolls…

It was so nice to sit and chat with Jenn about all sorts of things that many other people in my life just don’t “get”. We asked the host, Thomas, to take a picture of us before we left, and he insisted we take it in front of the restaurant’s namesake: the daruma. It’s a Japanese doll designed for good luck and wish-keeping. The right eye is usually filled in, and the left is filled in when a wish is fulfilled.

Not Weird. Different!

Another fairy visited me today! The lovely Crofter’s Organics people sent me some of their SuperFruits Jam to sample, and I’m so excited! I’d won jars of this great jam in a giveaway by Eating Bird Food months ago, but I really didn’t get a chance to enjoy them. I’m fully intending on using each of these jams in oats over the next few days!

The fruits are really interesting, including wild blueberries, cranberries, morello cherries, maqui, passionfruit, raspberries, yumberries, black currants and pomegranate. Each spread hails from a different continent, and they are 100% organic. I’m SO excited!
In other news, I found this at the organic market while I was waiting for my tire to get fixed after yesterday’s incident:

It was the first time I’d seen them in my area, and of course I had to try one. The flavor was IDENTICAL to a PB&J sandwich, but the texture was a little dry… but not enough so to stop me from buying these again! The lady at the store said she’d even get me a case if I wanted.
While I ate my bar and waited for my car (hey, that rhymes!), I talked to the lovely VeggieGirl. I am lucky enough to have developed a real-life friendship with her, and we chatted about blogs, school, random car stuff, and of course food. She was telling me about her latest favorite, and in her words “Holy Yum Delicious” combination, and she suggested I try it.
What was this combo? It sounds odd at first… but upon thinking about it, made a lot of sense. Sweet potato and avocado. Weird, right? I hesitated to put the combo on my plate with my teriyaki tofu… but I did it:

It was a delicious ripe avocado, and a super-sweet garnet yam… so I went for it. I took a piece of the avocado and some of the sweet potato, and was absolutely amazed by how delicious the combination was! The creaminess of the avocado along with the sweetness of the potato went together like they were meant to be. I immediately texted VeggieGirl to tell her how amazing it was! I suggest you ALL try this combo ASAP. Seriously. I don’t rave about things easily, and this was quite possibly the most surprising and delicious thing I’ve tasted in a LONG time!

That’s a Wrap

Nine weeks of camp has come and gone yet again… I still can’t believe I’ve done this ten times now, and will continue until, well, Adam and I start a family of our own. I grow so attached to my girls every year, the staff becomes family, and leaving is always bittersweet. Sure, I like the week of sleeping in before my “real” job starts again, and I definitely enjoy not being so exhausted… but I don’t love that I can’t keep seeing my girls grow and change as I did all summer!

Usually the end of camp means cooler weather, but we’re in for only the 2nd 90-degree weekend since June! I usually celebrate the end of camp with a dinner out with Adam, but he had to work late last night… so I went out with my friend Kristin. She knows all too well how relieving the end of camp can be, since we met at camp 10 years ago! After a bit of light shopping, we decided to go to a local sushi place that I’d only been to once before.

Bistro Wasabi is minutes from our house, and the one time we went, we were thrilled with the food but not that thrilled with the noise level. Last night, that was the case again. The food was amazing while the noise level and rude patrons, as well as the huge wait for our food put a bit of a damper on the night. Luckily, I’d started with this, so I didn’t care much:

I ordered one of my favorite appetizers too, agedashi tofu, and didn’t anticipate it being such a huge serving! I’m used to our more traditional place where servings are small. This was almost a full brick of tofu, lightly fried, and served in a delicious broth. Luckily Kristin helped me polish it off.

Then, my sashimi and one roll finally arrived. The sashimi was one shrimp, king crab, 3 pieces of tuna, 2 of salmon, and 3 yellowtail. The roll? A favorite: Philly roll with smoked salmon and cream cheese.

I ordered Adam a roll to go, some amazing-looking spicy tuna wrapped in tuna (we like tuna, can you tell?) and since it took so long, we got it for free. I promptly went home and fell asleep on the couch, still in my skirt outfit and contacts… it was a long and busy day!

Today is sure to be another fun day, but certainly more relaxing. We have a party to go to tonight at one of Adam’s friend’s, but thats not until at least 4… so I’m planning some relaxation, maybe some shopping, and definitely good food.

An Ironic Meal

Don’t worry, I’ll get to the Wednesday in Numbers… but tonight’s dinner really kind of made me laugh.

When I went to Whole Paycheck Foods on Monday, I bought (finally) some more tofu to bake a la Gliding Calm for at least one meal this week. I was quite excited to make it again, came home and immediately set to work pressing as much water out of the tofu as possible. While it was pressing, I started thinking about a side dish. Usually, I’ll do vegetables and/or noodles of some sort with it.

Vegetables… I had lots of those! Leftover baby tomatoes and red pepper from Monday, spinach that wasn’t getting used fast enough, and thought it would all make a lovely side dish. When I opened the fridge to get the spinach, I noticed a few slices of bacon sitting there (properly wrapped of course). “How about bacon in the spinach?” I asked Adam. “OOOH yes!” Bacon makes everything (well, most things) better!

I ended up making Gliding Calm tofu and spinach with bacon… tofu. And bacon. I’m a strange one. The spinach, tomato, red pepper, and bacon side dish though, was quite fantastic! I simply sauteed 2 diced pieces of bacon, then added a diced red bell pepper, halved baby tomatoes, about a pound of spinach, and some adobo. Then I took this photo out on our patio:

Buffalo Toad Food

Week 2 of camp is officially underway!! We had a blast today bowling, and two of my 4 year old campers got strikes! I can’t even do that well! It was also the very first time in 10 years of working at camp that I did NOT pig out on the snack food that all the junior counselors bought… I had 3 French fries, and was done! GO ME! Now, for a sentence that doesn’t end in an exclamation point: We had tofu for dinner.

Why the title of “Toad Food” instead of “tofu”? Well, when my sister and I were little, my mom would take us to this Japanese place not far from our house, and our meals always came with miso soup. Back then, I didn’t like the soup at all, but my sister LOVED picking the tofu out of everyone’s bowls. At one point, she started calling it “toad food” and it kind of stuck. As a matter of fact, calling tofu “tofu” is hard for me! It’s been toad food as long as I can really remember.

ANYWAY, when I got home today, we had a container of tofu that needed using up, so I sliced it up and got it under some weights to press out the water. Upon opening the fridge to concoct my usual Gliding Calm-inspired rub, I noticed that we had a HUGE bottle of Frank’s Red Hot just sitting there. Hmm… I wonder… buffalo tofu? I thought it could be done! THEN I remembered a simple recipe for buffalo chicken tenders, and decided to adapt it for tofu. Here are the steps, in numbered-list form (my second favorite, only to bulleted lists)

  1. Slice tofu and press out water.
  2. Sprinkle tofu with paprika and black pepper
  3. Melt 2 Tbsp. Smart Balance or other butter or butter substitute.
  4. Mix with approximately 1/4 c. Frank’s Red hot
  5. Bake or sautee tofu until crispy.
  6. Coat tofu pieces with butter/Frank’s mix.
  7. Enjoy!

I served ours on a bed of lightly sauteed spinach:

Now I remember how much I love Frank’s Red Hot. I’m not sure I like it quite as much as Green Dog Wine, but I do love the stuff! All this needed was a bit of bleu cheese dressing for dipping, and it would’ve been PERFECT!

And now, for the camper quote conversation of the day: Camper: MARA! I dunkded my head in the pool! Me: NO WAY! Show me again! (Camper dunks head) I never did that before and guess what? I didn’t drowned!

HOORAY for no drownding, and hooray for buffalo toad food! Tomorrow is a treasure hunt! (Sorry I’m so exclamation happy today)

An Ode to One of the Best

*Warning: slight sap fest ahead*

Almost two-and-a-half years ago, my fabulous grandma, Bertha passed away after being sick for a very short time at the age of 89. When I say fabulous, I mean fabulous! She volunteered at the local hospital, read books like a fiend, played Chopin on the piano as her “finger exercises” and was one of the best cooks and bakers I’ve ever met. My mom learned much what she knows about cooking from my grandma, and I learned from both of them. One of my first memories of my grandma’s house (admittedly, I might not actually remember it, but it might be from stories) is walking around as a little girl with tiny squares of peanut butter and jelly sandwiches with the crusts cut off. Grandma always had loaves of her famous banana-chocolate cake in the freezer for us, as well as one of my favorite baked goods ever: Pierres. One day, I’ll make them and post them… but let’s just say there’s almond genoise and chocolate chips involved.

One other thing I loved about my grandma’s house is that she had tons of, as Alton Brown calls them, uni-taskers. There was a ceramic “gum keeper” on her kitchen windowsill in the shape of a cat laying on its back. There was a small lidded box that conveniently held her Sweet and Low, then later Equal, and even later, Splenda. She had muffin tins of every size, as well as ramekins of every size. She had a meatloaf pan that had 2 parts: one with small holes in the bottom that sat in a slightly larger pan to catch fat. And then, there was my favorite.

DSCN2681 Any guesses as to what this uni-tasker does? I’ll help you out a little. It’s about 14” high, 8” in diameter, and has this as an insert:

DSCN2682Did that help? This is the ONLY pot like this I’ve ever seen, and it seriously fascinated me every time I saw it. Not to mention, I always knew exactly what was accompanying our dinner if this pot was on the stove. Any ideas? I guess I’ll show you:

DSCN2684That’s right… this uni-tasker is none other than an asparagus pot! The asparagus stand up straight in the bottom, about an inch of water goes in, and the cover goes on. In about 20 minutes on the stove, the asparagus are perfectly steamed and there’s no draining or fishing them out of gross asparagus water. I’m not sure how old it is, or where it originally came from. This pot lived in a cabinet under the counter at my grandma’s house for many years after we discovered the gloriousness of roasted asparagus, but grandma would still use it when I’d come over for dinner. I received this pot after my grandma passed away, and for some reason, when I saw asparagus at the grocery store the other day, I had this overwhelming urge to cook them in this pot and share its story with you all.

Needless to say, dinner did include asparagus tonight, as well as something new for us: Barbecued tofu! I adapted this recipe from a recipe I found on www.MyRecipes.com originally posted in Cooking Light. The recipe called for the tofu to be cut in “slabs” and placed on a sandwich. I cut mine in cubes, mostly because I hadn’t found the recipe yet! I did enjoy the light crispy coating that the flour added, and the spicy barbecue sauce I used was delicious! I love purchasing Firehouse because proceeds go to firefighter charitable funds.

DSCN2686After dinner, Adam and I headed out to Best Buy and the mall to do some obscure DVD shopping (WHY does nowhere have Star Trek 3?) and since we were there, I of course got some…FRUZ!

Today I did raspberries, strawberries and mini chocolate chips. YUM! They put it in a styrofoam container today (boo) but I do have to say, it did the trick. I made it last longer than its usual 6 minutes!

Tofurrito!

Tonight’s meal was, yet again, inspired by what was on sale at the grocery store! It’s not quite Poor Girl Eats Well cheap, but it’s still pretty darn inexpensive. I got out of work a little late today (ok, like a half hour late) and then headed to the grocery store with NO idea what I was looking for other than some protein for a special BBQ tomorrow.

I walked through the produce section first, as always, and was THRILLED to see baby spinach, buy one get one free, so that went into the hand basket. My favorite organic extra firm tofu, Nasoya, was on sale too! Usually $2.99, today it was 2/$4 so two containers went into the hand basket. Next, baby tomatoes were only $1.00, and my favorite La Tortilla Factory wraps were 2/$7 (which is a HUGE discount!)

You may have noticed that I said “hand basket” instead of “cart”. When I’m grocery shopping for a small amount of things (or intend to shop for only a few things) I grab a hand basket instead of a cart. I alternate arms, and look like an ass idiot doing bicep curls with it.

Anyway back to the shopping. Chicken was on sale too, as well as the intended protein for the BBQ, and a new flavor of Turtle Mountain coconut milk ice cream: COOKIE DOUGH! I’ve seen this all over blogs and have been dying to try it! It wasn’t on sale… but it never is! Finally, I came to the refrigerated condiment and fancy cheese section and grabbed a container of my favorite hummus: Sabra Original. Cheap you might ask? Oh yes, be jealous, thanks to Twitter and a contest hosted by Sabra, I got a coupon for a FREE TUB of Sabra hummus! FREE HUMMUS!!!

Of course, I have to stop at the grocery store on my way home again tomorrow because I forgot cereal and charcoal. Oh well, maybe they’ll be on sale too!

OH, and I have to confess: I did not go to Jazzercise. By the time I got out of work, done with the grocery store and post office, it was already past starting time. Things happen for a reason though…

On to dinner (which well, would make sense, right?) This is not so much a recipe as it is a procedure, and the ingredients are delicious as is, but could be changed. I wrote this "procedure” in 6th grade expository essay style. I call this:

The Tofurrito

First, slice a brick of extra firm tofu into 12 slices, lay on a bed of paper towels, cover with more paper towels, and another cookie sheet. Weight with a couple heavy books, a cast iron skillet, a small child… just enough to squish most of the moisture out of the tofu. Allow it to sit at least a half hour.

Next, remove the heavy objects and paper towels, and drizzle about 2 tsp. of olive oil over the tops of all the slices (2 tsp. total, not on each slice). Sprinkle with adobo seasoning or garlic powder and chili powder.

Then, heat a large skillet with non-stick spray. Add the tofu, seasoning side down to the pan. Sprinkle more adobo on top. Flip the tofu slices after the under side is well browned, and brown the other side. Keep the tofu warm as you assemble the wrap.

Place a high-fiber wrap of your choice on a plate. Smear with 1/4 of a smashed avocado:

DSCN2602Then, add about 1 cup of baby spinach leaves:

DSCN2603  Top that with the warm tofu. This will help the spinach wilt slightly and soften:

DSCN2604 Next, top the tofu with the shredded cheese (or imitation cheese product) of your choice. I used reduced-fat sharp cheddar, as well as some chopped tomatoes:

DSCN2605 I also added some hot sauce (Valentina, in case you were wondering), then rolled it up into a rather messy burrito-type wrap:

DSCN2606 I brought Adam his wrap before I assembled my own, and by the time I got into the living room (where we eat, yes in front of the TV), his was almost gone! This is the sure sign that a dinner is good! Once I tried mine, I agreed: this was a great thing! After sitting a little bit after eating, I decided I needed a second wrap. See, I have this problem where I eat tiny little meals throughout the day, and they hold me over just fine, and then I get RAVENOUS in the evenings! So, my second wrap contained: Sabra hummus, spinach, tofu, hot sauce, and a little bit of cheese. QUITE GOOD ALSO!!! I really think hummus makes things better, much like bacon makes things better!

Operation “Really Cool Thing” will be here on Friday! I’m beyond excited, and the few of you that know about said “Really Cool Thing” seem to agree that its “really cool!” No hints other than that, you’ll just have to wait and see!

Channeling…

After such a fun day yesterday, I was looking forward to having a relaxing Sunday… but when my friend called me at 10 a.m. to see if I wanted to go with her to the outlet mall, I of course said “yes!” and headed out the door!

DSCN2501We hit up Jamba Juice which is a total weakness of mine. Nothing like a strawberry/banana/soy milk/flax boost smoothie to make a morning great! We hit the road, my friend found some deals, and then we got sandwiches at Quizno’s. I’m usually a Subway girl, for sheer quantity’s sake. I can get a GINORMOUS sub for a very low calorie and fat count. My friend and I decided to try Quizno’s though, because a) it was there and b) they have those new Torpedo sandwiches that seemed appealing. I got a plain turkey one with no sauce and extra veggies…. and for what it was, it was quite good! I ended up being hungry about 2 hours later and Adam and I got some soup at Panera.

We went to the grocery store, and scored a TON of produce and canned goods for a very little amount of money. We got a HUGE thing of strawberries for about $2, cilantro for a later recipe for $0.50, and the best deal: eggplants for $2! No, none of these items will be cooked in the same recipe. 

Adam had a meeting at work tonight, so before he left we decided on dinner so that I could start cooking while he was out. What did I make? Well, I channeled my inner Gliding Calm (who, by the way, just showed her face on her blog for the first time and is amazingly fabulous!) Dinner consisted of:

    • Gliding Calm baked (well, pan-baked) tofu
    • Pan-roasted broccoli
    • Rice noodles with a PB2 peanut sauce (we know how Miss Gliding Calm loves her PB2!)
    • A realization that I may seem a bit like a creepy stalker by saying all this :)

The baked tofu is something that I’ve made many times before, but something about the way this stuff came out was particularly delicious. I pressed the water out of it under a heavy book and cast-iron pan for a good half hour before mixing up my rub and pan-baking. I didn’t add any extra oil to it, just cooked it in a pan instead of heating up the whole kitchen with turning on the oven.

The noodles were something that came to me last night in a late-night scramble for a snack. For two servings of cooked noodles, mix this up:

    • 4 Tbsp. PB2
    • 1 tsp. dark sesame oil
    • 1/8 tsp. sriracha (or to taste)
    • 1/8 tsp. ground ginger
    • 1/8 tsp. garlic powder
    • 2 Tbsp. water

Pour the mixture over the hot noodles, and stir well. Serve immediately and enjoy!

You’re probably wondering “where the heck are the pictures?” Well, when it came to plating dinner, I think I was channeling my inner Rose… I don’t have a cute story like she always does for her amazing bowls of oats, but I could make up something about how the tofu and the broccoli were having a party or something…nah, I’ll leave the great writing to Rose. As you may have been reading over the past few days, I’ve had many Guests for Dinner! Tonight is no exception! Tonight, the lovely Hallie from HealthyTwists is joining me for dinner. What’s funny is that I had her guest post all scheduled for tonight, and low and behold: our dinners were quite similar! So, Hallie, pull up a seat at my table and tell us all about your dinner!

Hi! Hallie here from Healthy Twists. I’m happy to be a “guest” at Mara’s dinner table…although since the weather’s usually nicer in San Diego than Chicago, next time dinner’s over here, ok Mara?

I have been on a total tofu kick lately. I love the high-quality protein that doesn’t make me feel all gross after like I sometimes do when I eat meat (even chicken…weird huh?). I had a jalapeño that needed to be used up, so I created this sweet/spicy marinade to go with the tofu.
Spicy Orange Baked Tofu
Serves 1–2
·    1/2 lb firm tofu, pressed and sliced into triangles
·    1/2 cup fresh orange juice
·    1  T rice wine vinegar
·    1 T soy sauce
·    1 t canola oil
·    1 t teaspoons sesame oil
·    ½ t minced garlic
·    1-inch piece fresh gingerroot, sliced
·    1 green onion, cut into 1-inch strips
·    1 jalapeño pepper cut into strips
Mix together marinade ingredients in a small bowl.
In a plastic baggie or Tupperware container, pour the marinate over the tofu and let sit in refrigerator for at least 30 minutes. I made mine in the morning so it sat for about 9 hours!
Bake tofu @ 400 degrees for about 25 minutes, flipping after 15.
I decided to have my tofu with some roasted vegetables because a) I was already using the oven at 400, b) I’m going out of town later this week and I HATE food waste, and c) roasted vegetables are DELICIOUS and good for you! I coated broccoli with olive oil spray and pepper, and stuck them in the oven once it was preheated. I let them cook for 10 minutes before putting in the tofu on the top rack. When I flipped the tofu, I also shook around the veggies to get optimum caramelized yummyness on the veggies.

I was inspired by a Recipezaar recipe that altered a little to reflect what I had on hand, and lower the fat content, like I always do. I realized though, that the end result is similar to my girl Mara’s Orange Tofu that she made awhile back…so I guess tofu-loving minds thing alike?
I ate my dinner with Sriracha, because the marinade wasn’t quite spicy enough for me. As I’ve mentioned on my blog, I like it HOT. Still, the flavors went really well together and since I marinated the tofu all day, the orange/soy/ginger combo could be tasted throughout the entire dish.

Tofu and Guisantamole

How was everyone’s Monday? It was cold and dreary here, yet again, but the weather people are promising sunshine and warmth by the end of the week! I’ll believe it when I see it. Chicago in the Spring is kind of crazy… one day its 35 and cloudy, and the next: 65 and sunny. Makes no sense!

I mentioned yesterday that my mom had made a fantastic dip for Easter dinner at her friend’s house aptly named “Green Pea Guacamole.” Being the Spanish teacher that I am, I couldn’t leave well enough alone, so I had an interesting thought process on the way home (does anyone else do this?):

  • Guacamole comes from the word “aguacate” for avocado and “mole” for sauce.
  • Man I really want an avocado
  • I just bought peas for mom’s green pea guacamole
  • The word in Spanish for green pea is “guisante”
  • I still really want an avocado… no wait, I don’t have the Points®
  • I could call the green pea guacamole something creative…
  • What would look good on the blog?
  • GUISANTAMOLE!

Yup. That’s how my brain works. Series of random thoughts that somehow wind up back at the original point seems to be the trend lately… anyway, thats where I got the title for this post! Mom, what do you think about the name for the dip?

Originally, this “guisantamole” was my grandma’s recipe. She’d make it in her Cuisinart, and every time she’d make it, she’d remind us “this is made of PEAS!” The following recipe makes 6 HEFTY dip servings.

Guisantamole

Grandma’s Green Pea Guacamole

Ingredients

4 c. thawed frozen green peas

1 large red onion, cut into chunks

1 large bunch cilantro

juice of 2 limes

1 jalapeño, cut into pieces

salt, pepper, and cumin to taste

Directions

Combine all ingredients in the bowl of a food processor (or large bowl if using a hand blender) and pulse to combine, and then blend until smooth. Enjoy with tortilla chips or veggies, or even as a spread on a sandwich!

Again, a simple recipe that is much more than the sum of its parts. It really gets better the longer it sits, so I’m excited to have some tomorrow.

Forget chicken on a salad, gimme baked tofu!

Tonight’s dinner was really simple and delicious. I made some standard baked tofu (using the fantastic GC Tofu Recipe) but I did something a bit different. I cut my tofu into cubes instead of slabs, and cooked it in a super-hot skillet instead of in the oven. I don’t think I’ll bake tofu again! This was half the time and twice the taste! I think Krista was the first one to tell me about doing that, and its AWESOME! Thanks Krista! I put my crispy tofu cubes on top of a salad with some TJs fat free Asian sesame vinaigrette, and all was good in the hood.

Without even realizing it, I did really well today with Coco’s salad challenge! I had a chicken Caesar at lunch today, and then this huge salad for dinner! I feel so much better when I eat lots of vegetables over lots of junk… and I’m so relieved to be eating/cooking my own food this week!

Rose had a post today where she talked about dreading a certain day of the week… and I realized while reading (and commenting) that I really dread Tuesdays. It’s my longest day of the week, and Friday just seems SO FAR AWAY! I’m going to enjoy my Monday night before the Terrible Tuesdays sink in… sigh…
