National Sandwich Day

Today was National Sandwich day! I am quite a fan of the sandwich, so I decided to celebrate with a creation that uses up leftover supplies from last night’s grilled cheese dinner.

There were a few pieces of Italian bread left, 2 slices of cheese, and some red onion. I couldn’t just have grilled cheese again and I was craving some protein, so I cooked 2 very small chicken breasts in a pan. I caramelized 2 big slices of red onion, then I assembled this delicious creation much like my grilled cheese yesterday, toasted it in a pan, and dove in…

Such deliciousness! I think the protein will help keep me “on the mend”, and besides, who really needs an excuse for melted cheese? I’m definitely satisfied, and have got to remember to stay up on my protein. With the exception of an egg in my breakfast, I hadn’t had much at all since Thursday!

I promise I’ll stop being boring soon… this whole being sick thing is taking a lot out of me. If it weren’t so difficult as a teacher to take days off, I’d have taken another sick day by now. For now, I’m just going to rest up, drink lots of tea, and try to get well.

*Warning* Blah Post Ahead

I’ve been sick since Friday. Not sick like I was last spring where I had to go to the hospital, but sick. I had a headache so bad I nearly passed out in the shower Friday morning, a fever maxing out at 102 degrees, and my body hurt like I just worked out for hours.

Luckily, I’m on the mend, and my appetite came back yesterday and I indulged in some pizza. Tonight all I wanted was Chinese food, so that’s what we got!

We always had chicken chow mein cantonese growing up, and its a total comfort food for me… which is what I needed! I’m resting up tonight as I’m planning on heading back to work tomorrow. Too bad I have too many cooties to go visit my favorite little peapod!!

Pomp and Circumstance

One of the perks of being a middle school teacher is, at the end of the year, we get a special recognition at the 8th grade graduation ceremony. Just before the students’ names were called to get their diplomas last night, the assistant principal gave a tear-jerking thank-you and goodbye (as he’s moving on to a different school next year). As we turned to leave the gym, we got a standing ovation from our students and their parents… I got goosebumps!

You may be wondering why the post about dinner is coming through at 6:30 in the morning? Well, all day yesterday (and so far today) I’ve felt like garbage. Sore throat, disgusting cough, headache… and when I walked in the house last night after having this:

I hit the road home and fell asleep promptly the moment my head hit the pillow. I have to say though, looking back at my food choices last night, I’m quite proud of myself! In a past life, I would’ve heaped my plate full of the greasy Mexican food, then gone back for seconds. I was perfectly happy with my 3 little pieces of food, and I’m sure the margarita had something to do with that. I’m not objecting though!

I’m officially off for my last day of school for the 2008-2009 school year! Next year, I’ll start the year a Señorita and end it a Señora! Have a fabulous Tuesday!

This flu royally sucks… but at least I’m on the mend. Thanks for all your support/kind get well messages yesterday! They meant a ton! Hopefully, Ill be back to normal by Monday or so…

Dinner Last Night?

Nope, didn’t eat last night.

Came down with a wicked stomach flu and this became my “dinner”:

I spent about 5 hours in the hospital getting IV fluids and medicine to make me stop throwing up and well… other stuff.

I can’t even stand to look at food, so sorry if I don’t comment at all today or tomorrow… this sucks.

Sunday Night Barbecue

Well, I finally feel better! I’m not “ship-shape” by any stretch of the imagination, but I’ve managed to keep soup, a baked potato, and noodles in my stomach with no ill effects… so I’m “better”! Thanks for all the healing thoughts, I really appreciate them!

Since Adam wasn’t sick at all, I decided to be a nice fiance and make him a decent dinner. We had some frozen chicken drumsticks and loads of Sweet Baby Ray’s barbecue sauce, so I decided to make a taste of summer on this 16* day. Really no recipe here… I thawed the drumsticks in the microwave, put them in a glass baking dish, sprinkled with garlic powder, salt, and pepper, then covered them in about 1/2 c. barbecue sauce. I baked them at 400*, covered, for about 35-40 minutes (honestly cant remember!). Adam said it was good!

While Adam munched on the chicken, I ate a bowl of my ultimate comfort food: parmesan buttered noodles! (Whole wheat of course, and low-fat “butter”) and thank goodness, I’m still feeling ok!

Being sick STINKS!!!

Getting a stomach bug while being a food blogger really puts a damper on the hobby! I’m still not feeling great, but I thought I’d at least share my Thursday and Friday dinners.
Thursday, I made a simple dinner of sauteed fresh baby spinach and some TJ’s apple and maple chicken sausage. I should’ve known then that I was getting sick, because it’s a favorite of mine, and I could hardly eat it.

Then, last night, Adam and I babysat and the mom offered to buy us dinner. We got turkey burgers from Red Star Tavern across the street, along with ahi tuna bites since I’d been feeling better. BIG MISTAKE!! While both things were delicious, and totally something I’d eat another time, NOT the best idea last night.

Sorry for my lack of comments the last couple days, I’ve hardly been on the computer! I have been reading and commenting a bit…
