Buitoni and a Guest Post!

So last week, I (like gazillions of others) got a ginormous (can I use any more made up words?) package from FoodBuzz containing a lone package of these:

dscn2443-300x225(Do we like the Polaroid background?) Since they contained mushrooms, and Adam works late tonight, I decided yup! They’re dinner! I followed the package directions and drizzled them with a bit of olive oil and parmesan cheese, and they were accompanied by some pan-roasted broccoli:

DSCN2485I gotta say… these were quite delicious and very gourmet tasting. My only complaint? They were not very satisfying. I had 6 of them, a serving, and I’m still hungry. It might have something to do with the whopping 675 calories I burned tonight at Jazzercise, but I don’t think I’d normally use this many calories and sodium (33% DV per SERVING) on a regular meal. It was a nice treat though. Thanks Buitoni and FoodBuzz!

Now, I’ve been having many Guests for Dinner this week, and am LOVING all the guest dinners coming in! Tonight though, I have a special visitor. My good friend Holly and I “met” on WeightWatchers online almost three years ago now. I asked her to do a guest post, and chronicle her new “adventure” of going Gluten Free. She’s such an inspiration to me, and I can’t WAIT to see her at my wedding in November! So, Holly, pull up a chair to my table, and tell us your story!

When Mara asked me to write a guest post, I was both eager and anxious! I am not a food blogger, I’m a potter! But, I agreed, nonetheless. I love to cook, and enjoy trying new recipes all the time, so it was tough when Mara asked me to make and post about a favorite recipe.

She also asked me write about my new journey on a Gluten Free diet, so here goes. TMI warnings and all that!!

Until a little over a year ago, I struggled with stomach problems. I would get terrible pains that would almost be debilitating. I had terrible bloating and would feel uncomfortably full after even small meals sometimes. I had regular issues with gas and indigestion – I mean, I could go head to head with my Dad! I was also lactose intolerance, and could not even eat ice cream. My parents had no idea what would cause it, and neither did I. These pains would strike me at the oddest times, and were seemingly unexplainable. At several times in my life, I had given up wheat, and felt a bit better. Most recently, in December of 2007, I found myself again wheat free. At first I felt better, but kept reacting to something. After much reading, and realizing I was still reacting to my beloved OATMEAL, I knew I had to do something. Eating a bowl of oatmeal became a painful experience that made me learn to love grits! Ha!

So, I decided in early 2008 to try a gluten free diet. OH.MY.GOD. Within a week, I was a new woman. I had no stomach pains, my clothes felt better and I was much happier. People around me even commented that I was no longer a raving B@#($ sometimes! Obviously, GF was the answer! Over the next year+, I fine tuned my diet, and feel fantastic. I have more energy and I am amazed at how little gas and indigestion I have most days. Having lived your life that way (“full of it”), the complete opposite feeling is often hard to describe, and accept!

I decided personally not to get tested for Celiac disease, simply because the treatment is the same as for a gluten intolerance – avoid gluten forever. The improvement I felt physically after going on the diet was enough of a diagnosis for me. Long story short? going gluten free has changed my life for the better. It’s a pain, but so worth it!

OK, now, here’s the recipe – which is what you all really want, right? Unlike Mara, I use recipes. I concoct things, but usually just want to make something I KNOW will be good and not futz around with creating a whole new recipe! The one below is one of my favorites, and comes from Cooking Light. The combination of pork and peanut butter may strike you as odd, but trust me (and MARA) – it’s amazing!  Because I have not been able to find gluten free teriyaki sauce in San Antonio, I had to get a friend to ship me some so I could make this dish!

Thai-Style Pork StewYUM

Stew:
2 pounds boned pork loin, cut into 4 pieces
2 cups (1 x 1/4-inch) julienne-cut red bell pepper
1/4 cup teriyaki sauce
2 tablespoons rice or white wine vinegar
1 teaspoon crushed red pepper
2 garlic cloves, minced
1/4 cup creamy peanut butter
Remaining ingredients:
6 cups hot cooked basmati rice
1/2 cup chopped green onions
2 tablespoons chopped dry-roasted peanuts
8 lime wedges

To prepare stew, trim fat from pork. Place pork and next 5 ingredients (pork through garlic) in an electric slow cooker. Cover with lid, and cook on low-heat setting for 8 hours. Remove pork from slow cooker, and coarsely chop. Add peanut butter to liquid in slow cooker; stir well. Stir in pork.

Combine stew and rice in a large bowl. Top each serving with onions and peanuts; serve with lime wedge.

Seriously, that recipe is SO GOOD that I can’t even have it in the house! No matter how much of it I make (tried halving the recipe, doubling the recipe…) it was ALL GONE in oh, 2 days. It works great with chicken too.

Hippity Hop!

I hope everyone had a fantastic Easter! Even though I’m Jewish, my mom’s best friend (really, she’s like my aunt) has had us over for Easter every year for the last, oh…forever! I can’t remember an Easter when we didn’t all get together, hunt for plastic eggs, eat amazing food (usually the first cook-out of the year), and way too much chocolate. This year was no different!

We all met at my mom’s best friend’s house, and were greeted by the familiar scent of the grill heating up! There was a delicious appetizer that my mom brought called “green pea guacamole.” I’ll be making this very soon, so you’ll get pics and the recipe then.

Each of us were handed an empty basket, and we went out and searched for Easter eggs! The most fun was helping Sophie (the 4-year-old) find eggs and fill her basket. Each egg was filled with something…some candy, some stickers, some change, and some cash! Adam and I ended up with about $3.

After we came inside, we sat down to eat, and the table was filled with AMAZING food! (See Eo, told you the pictures were great!)

Each and every one of these dishes were just as delicious as they looked! The salmon is a recipe that my mom and her friend have been making for years, and it just SCREAMS Spring. It was amazing to have bright colors on my plate besides the obligatory sweet potato… and finally! GOOD tomatoes! (Can you tell that I’m thrilled it’s getting warmer out?)

After that delicious dessert plate, there may or may not (ok, there were) a couple small chocolates consumed… and I’m quite full! Thanks for yet another wonderful Easter!

As promised, Adam wrote a review of the Philadelphia cream cheese flavors that we received from Tastespotting:

If you read Mara’s post on the 8th you would have seen that Tastespotting sent us samples of two new flavors of Philadelphia cream cheese. The new flavors were Tomato Basil and Spinach Artichoke.  They were also kind enough to send us Triscuit and Sociables crackers to put the cream cheese on.

First of all, the reason I am writing this review is because of the two of us I am a self-proclaimed cream cheese connoisseur. All my life I have always loved the typical bagel and cream cheese. So, my first reaction when we received the package where “where the hell are the bagels?”  However, since we had no bagels I decided I had no choice but to put the cream cheese on the crackers. Both flavors were good, but on crackers I would say I preferred the spinach artichoke flavor the most. If I had a nice asiago cheese bagel I would have preferred the tomato basil. The spinach artichoke flavor felt more like a dip than it did a cream cheese you would shmear on your bagel. I did have the opposite opinion for the tomato basil cream cheese. While I would not like the tomato basil cream cheese on my typical egg bagel it would tastevery good on a more decadent bagel such as the asiago cheese bagel I mentioned before.

All in all they are great flavors, however, being that I am someone currently trying to lose weight I would say I would not purchase these products. They are very tasty and if I had a great metabolism I would eat all the cream cheese I could. But, for someone fighting with their weight I do not feel that the flavor is that fantastic to warrant the amount of calories and fat that are consumed when enjoying this product on your favorite carbohydrate packed cracker or bagel.

Thanks Adam! I did my own tasting of the cream cheeses, but they were such a treat that I was pretty much lost in how decadent they tasted, rather than if they were good or not.

It was quite an exhausting day, and I’m ready to relax and have NO major events for  an entire week! It’s almost a relief to be able to eat only my own food for a while. Have a great night, and hope you all had an amazing Easter holiday!

What a Wonderful Day!!

Today was just fantastic! For one, it was Friday, which is awesome. AND it was payday: DOUBLE awesome. I spent the afternoon after work with my friend Judee (of simple pasta recipe fame) getting a manicure and pedicure. My toes are now HOT pink, and my nails are a beautiful magenta… much more cheerful than those dark purples that are around!

I got home to 2 surprises, one of which you need to see for yourself:

My Secret Cupid gift came! It was in this beautifully decorated box, and upon opening the package, I found the cutest assortment of gifts and the sweetest card from Caroline over at ConsiderEatz! THANK YOU SO MUCH CAROLINE!!!!! I’m in love with all of my lovely gifts!

Caroline sent me a tiny green vase (she read about my love of tiny things), an adorable pink owl scrubby sponge (my love of pink things!), caramel soy crisps which I’m now DYING to try, and the lovely cloth that they’re all laying on? When the mailman came, he knocked on the door, which meant there was a package! Adam opened the door and said “WHOA Heavy package!” YAY! My package from Janny over at POM Wonderful came! We now have a shelf full of 8 adorable bottles of POM juice! Thanks Janny!

Now, on to dinner. Since it’s Friday, Adam and I wanted to go out. We could NOT decide on a single place to go, so we ended up at Sweet Tomatoes (also known as Souplantation in some areas of the country). I got myself a HUGE salad:

Then continued my meal with a small baked potato with broccoli and cheese sauce:

Then, I finished off my dinner with a lovely sundae: warm chocolate cake, vanilla soft serve, and caramel sauce. This whole bowl is under a cup, so this was JUST enough!

We ran a couple errands, and I came home and we’re watching “21″ on OnDemand. So far, its a great movie. As I was catching up on blog reading, I found that the SITS girls (Secret is in the Sauce) are holding a FAB contest to win an entire bedroom dream set including sheets, sheet spray, and all sorts of other goodies. Don’t bother entering…it’s already MINE!

Cuban-Style Chicken, Black Bean, and Sweet Potato Stew

When I was on my way home from work today, I had literally, no idea what the heck to make for dinner. No idea whatsoever. I knew I had chicken, but I also have ground beef, pasta, tomato sauce, and various other veggies… when I got home, I started scrounging. I found a sweet potato… then 2 cans of black beans… then chicken broth… then I had an idea! A quick, spicy, stovetop stew was perfect for this absolutely freezing night. I decided to take a few flavors I know and love, along with a technique I learned from making Ropa Vieja: meat + vinegar + slow (ish) cooking = really tender meat.

Cuban-Style Chicken, Black Bean, and Sweet Potato Quick Stew

Ingredients

2 large chicken breasts, cut into chunks

1 large sweet potato, diced

3 cloves of garlic, minced

2 cans (15 oz) black beans, rinsed well

1 can (15 oz) chicken broth

2 Tbsp. chili powder

1 tsp. cumin

2 tsp. olive oil

1 Tbsp. red wine vinegar

Sriracha to taste

salt & pepper to taste

2 c. cooked rice

sour cream (if desired)

Directions

In a skillet with a lid (or pot), heat the olive oil and garlic. Sautee until aromatic and garlic is lightly browned. Add the chicken, sweet potatoes, beans, broth, vinegar, and spices. Stir well, bring to a boil, then lower heat to medium-low and simmer, covered for about 35 minutes. Serve on rice with sour cream on top.

I call this “Cuban Style” because, in many of the Cuban dishes I’ve had and made, they mix a bean-based protein, a meat-based protein, and multiple starches along with intense flavors and slow cooking. Next time I make this, it’s going into the crock pot to cook for even longer. It was very satisfying with all the different flavors and textures!

Not long after finishing dinner (and our first set of thank you notes!), there was a knock at the back door, and the UPS man handed Adam a mystery package. I recognized the name of the company on the outside of the box, but definitely did not order anything from them! Then it hit me! It was the hummus I’d won from Back In Skinny Jeans‘ giveaway! Stephanie at BISJ told me that I’d won “hummus in a tube”, but when I opened the box, there was a great surprise!

I got 4 jars of Wild Garden Hummus, 2 in original flavor and 2 in Roasted Garlic. I’m so excited to try them!

The Gnu Fairy Came!!

When I got home today, there was a package waiting for me on the kitchen counter. I didn’t remember ordering anything, so I was a little surprised, but when I opened it, I found that the Gnu Bar fairy (ok, really it was the lovely Robyn from Gnu Foods) had come and left me a very generous present! Inside was this beautiful box full of 5 different kinds of bars:

I of course, immediately tore into a Peanut Butter bar. While it didn’t exactly taste like peanut butter, it was pleasantly sweet and had a fantastic chewy texture. It was also SUPER satisfying! I was ravenous on my way home from work, and this bar kept me completely satisfied for nearly 3 hours, a major feat. Using the nutrition facts, I was also able to calculate that each of these bars has a mere Points® Value of 2, which is a bargain! When Adam got home, he wanted a cinnamon raisin bar. He said:

“I would highly recommend this bar! It tastes like an oatmeal raisin cookie with a good amount of cinnamon. I like that its soft, and for only 2 Points®, it’s definitely the best bar out there!”

I would say there’s a rave review so far! I’ll be having a cranberry orange one for breakfast tomorrow to help keep me away from the “Pig Out” foods in the lounge. Once a month, a team of teachers brings in a plethora of foods for everyone to share… usually not too healthy, and I’m DETERMINED to absolutely NOT pig out!

Dinner was über boring. We had leftovers from last night’s dinner, the Zesty Italian pot roast. It was, if possible, even better today! In case you forgot what it looked like, here’s the pot roast:

I also had a (non-photographed) carrot with peanut butter since I was low on veggies for the day. I’ll probably have a Dark Ferraro Rocher for dessert during Grey’s Anatomy.

OH! I also want to give a big thank you to my friend Julie over at Flip This Body for the shout out today! I’m so glad you liked the recipe site :) Also, a huge thank you for all the well-wishes. So far this antibiotic seems to be working well, and I’m finally feeling like myself again!

QOTD: How do you avoid overeating at free food events? I almost always try the “eat before I get there” thing, but then I just end up eating twice. Any hints for me?
