That’s a Wrap

Nine weeks of camp has come and gone yet again… I still can’t believe I’ve done this ten times now, and will continue until, well, Adam and I start a family of our own. I grow so attached to my girls every year, the staff becomes family, and leaving is always bittersweet. Sure, I like the week of sleeping in before my “real” job starts again, and I definitely enjoy not being so exhausted… but I don’t love that I can’t keep seeing my girls grow and change as I did all summer!

Usually the end of camp means cooler weather, but we’re in for only the 2nd 90-degree weekend since June! I usually celebrate the end of camp with a dinner out with Adam, but he had to work late last night… so I went out with my friend Kristin. She knows all too well how relieving the end of camp can be, since we met at camp 10 years ago! After a bit of light shopping, we decided to go to a local sushi place that I’d only been to once before.

Bistro Wasabi is minutes from our house, and the one time we went, we were thrilled with the food but not that thrilled with the noise level. Last night, that was the case again. The food was amazing while the noise level and rude patrons, as well as the huge wait for our food put a bit of a damper on the night. Luckily, I’d started with this, so I didn’t care much:

I ordered one of my favorite appetizers too, agedashi tofu, and didn’t anticipate it being such a huge serving! I’m used to our more traditional place where servings are small. This was almost a full brick of tofu, lightly fried, and served in a delicious broth. Luckily Kristin helped me polish it off.

Then, my sashimi and one roll finally arrived. The sashimi was one shrimp, king crab, 3 pieces of tuna, 2 of salmon, and 3 yellowtail. The roll? A favorite: Philly roll with smoked salmon and cream cheese.

I ordered Adam a roll to go, some amazing-looking spicy tuna wrapped in tuna (we like tuna, can you tell?) and since it took so long, we got it for free. I promptly went home and fell asleep on the couch, still in my skirt outfit and contacts… it was a long and busy day!

Today is sure to be another fun day, but certainly more relaxing. We have a party to go to tonight at one of Adam’s friend’s, but thats not until at least 4… so I’m planning some relaxation, maybe some shopping, and definitely good food.

Cheesy Goodness (and Winner!)

I cannot believe that tomorrow is the last day of camp. These past 9 weeks, while exhausting, have been an absolute blast, and I’m so proud of how grown up my little “Duckies” have gotten in this time! I’m so excited to have some time off before school starts up again, and most of all, get back in my “normal” eating schedule.

Tonight, the plan includes watching some DVRed TV, and painting names and pictures of duckies on 9 sets of little gifts for my girls. I’ll post a picture when I’m finished.

Dinner tonight was simple, and utilized the free brie (hey that rhymes!) we got from the Chavrie company. Not only is it delicious, but since it was free, it was even MORE delicious! I sauteed some chicken tenders (just the trimmed chicken, not fried chicken) with a random spice mix I found in the cabinet and proceeded to top a huge plate of raw baby spinach and tomatoes with sauteed mushrooms and red peppers, the chicken, a crumbled piece of bacon, and 2 small pieces of brie. Just look, it’s gorgeous!

Are you getting tired of seeing my spinach speckled with red peppers yet? They’re just SO GOOD!! I’m quite satisfied, and there’s more veggies in the pan if I need them. So far, I’m still good…

Numbers Wednesday!

Today was the day that many campers look forward to all summer! Our entire camp went to Six Flags Great America for the day!

Not Blogworthy

An annual tradition at camp, at the end of the summer, is that the “loser” of a big bet (I won’t go into it) has to buy everyone else dinner.

There were 10 of us.

There were wings and girls in tiny orange shorts involved.

Definitely not a blogworthy dinner… though it was a blast!

I did eat one interesting thing though: a fried dill pickle. I had a few slices and they were delicious!!! I didn’t expect to like them…

The Airportista

About a week ago, while wasting time on Twitter (are you following me yet?) I got a message from Gina, a.k.a. The Fitnessista, saying that she had a 2 hour layover in Chicago on August 6 at 6:45 and could Jenn and I meet up with her? Since I would be able to make it to O’Hare by that time on that day (today, duh) I jumped at the chance! I agreed to meet her, and even though our only option would be to get coffee from a kiosk because of security, we thought it would still be fun. 200908062134.jpg

Then today, when I mentioned to my boss at camp that I had to be at the airport, he suggested that I leave a bit early so I could make it home first. I texted Gina and told her that I’d have some more time, and could I bring her dinner? When I suggested Indian, of course she agreed. She also said that The Pilot would want something a bit more hearty, so I offered to pick up food for him too.

First, I stopped at Portillo’s, a Chicago standby for Italian beef and hot dogs, and picked up a sandwich and salad for The Pilot (I’m calling him The Pilot because I can’t remember if its cool to use his name!). Then I headed to the Indian place nearest to us for food for Gina and me.

After braving the ridiculousness that is the parking garage at O’Hare, I made it into the baggage claim area and met up with Gina and Pilot! I recognized her right away, and we headed off in the baggage claim/terminal area to find a place to sit, eat, and chat. I think we all agreed that we should all live closer to each other! Unfortunately, Jenn couldn’t make it, but she was definitely missed!

I enjoyed my chicken tikka masala (a spicy Indian dish that I adore, complete with a little rice and a side of naan)

Gina had her favorite, Baigan bartha, of which I didn’t get a picture…but she did! And the Pilot completely devoured his authentic Chicago Italian beef sandwich with sweet peppers:

After thoroughly enjoying our meal on the baggage claim bench, chatting about weddings, blogging, food, and tons of other things, we took a picture in front of said bench:

I had so much fun meeting Gina, and I really hope we can hang out again sometime, maybe somewhere a bit more fun than Terminal 1 at O’Hare!

A day wouldn’t be complete without a camper quote of the day, but this one is a bit different as it comes to you in visual form. Today’s craft was beaded necklaces, and some of the beads were plastic letters. My friend’s camper randomly chose a bunch of beads out of the bucket and strung them on her string. Why is this a quote of the day? Well… this girl can’t read yet… and here’s what came out:

Tomorrow is Harry Potter day at camp, and I’m going as the Snitch! You know, the little golden ball with silver wings? My friend is going as a Firebolt, and another friend as a bludger. You could say we’re nearly a Quidditch set!

An Ironic Meal

Don’t worry, I’ll get to the Wednesday in Numbers… but tonight’s dinner really kind of made me laugh.

When I went to Whole Paycheck Foods on Monday, I bought (finally) some more tofu to bake a la Gliding Calm for at least one meal this week. I was quite excited to make it again, came home and immediately set to work pressing as much water out of the tofu as possible. While it was pressing, I started thinking about a side dish. Usually, I’ll do vegetables and/or noodles of some sort with it.

Vegetables… I had lots of those! Leftover baby tomatoes and red pepper from Monday, spinach that wasn’t getting used fast enough, and thought it would all make a lovely side dish. When I opened the fridge to get the spinach, I noticed a few slices of bacon sitting there (properly wrapped of course). “How about bacon in the spinach?” I asked Adam. “OOOH yes!” Bacon makes everything (well, most things) better!

I ended up making Gliding Calm tofu and spinach with bacon… tofu. And bacon. I’m a strange one. The spinach, tomato, red pepper, and bacon side dish though, was quite fantastic! I simply sauteed 2 diced pieces of bacon, then added a diced red bell pepper, halved baby tomatoes, about a pound of spinach, and some adobo. Then I took this photo out on our patio:

CPK? A-OK!

WARNING: SUPER SHORT POST COMING UP!

It was a stressful day, since I spent a good portion of the afternoon in an ambulance and at the hospital with an injured camper. He’s doing ok, he has a fractured femur and will be having surgery either late tonight or early tomorrow morning. Happy thoughts, prayers, positive energy etc. would be much appreciated!!

I met my friend at California Pizza Kitchen for a late dinner and some photo editing (which I’m fairly good at!), and i got a BBQ chicken chopped salad without cheese, easy on the crunchy things, and fat free dressing. It was SO delicious!

We then went on a wild goose chase to find a Walgreens with a working photo kiosk to print said edited photos, only find that the printed photos from the THIRD kiosk printed with the tint messed up.
I treated myself to a small McDonalds $1 ice cream, and am calling it a night.

Camper quote of the day, while playing with multi-colored “ball in a cup” toys: “The yellow one is banana ice cream, the purple one is grape ice cream, the blue one is water ice cream, and the green one is grass ice cream.” Needless to say, my mind immediately went to trying to figure out how to make Amazing Grass ice cream!

Tomorrow: a day at an arcade, and I’m thinking another Wednesday by Numbers!

Mostly Organic, All Delicious!

I haven’t had a day like today in a long time… it was SUCH a great day! Camp spent the day at a fantastic water park, which was something of a miracle. There were huge thunderstorms in the morning, and more storms when we got back, but in the almost 3 hours we were there, the skies were clear and it was a beautiful day!

I was honestly kind of surprised that I had such a great day, because I stepped on the scale this morning and I was about 6 lbs. heavier than I thought I was. Rather than letting the number give me an all-out excuse to pig out, I took it as a hint that I need to get my booty in gear, eat what I know my body needs, and get some darn physical activity.

Usually, I carpool with a friend of mine to camp, but he didn’t come to camp today, so I didn’t have any excuse to NOT go to the grocery store after work. Did I just go to any old grocery store? No, of course not. I made my first trip to Whole Foods in (wait for it) almost 3 months! I was able to pick up some Amazing Grass bars for Adam, as well as some of the most enormous organic green grapes I’ve ever seen. I got local organic peaches for $0.99 per pound, and a HUGE English cucumber for hummus dipping.

I went in the store with one intent: buy ingredients for a veggie-full dinner as well as spinach and bananas for Green Monsters. Adam and I have been TERRIBLE about actually eating vegetables, which is so sad because local produce is so fantastic right now. Starting today, we’re “back on track”, and dinner tonight was a great reminder of how much I love fresh veggies.

Shopping the produce section at Whole Foods was really an exercise in restraint since I wanted five of everything, but I accomplished my goal! I have a pound of baby spinach for smoothies, as well as organic bananas, organic frozen peaches and strawberries, and unsweetened Almond Breeze.

Then came the mission for dinner. Fresh organic corn, fresh jalapeÃąos, shrimp, avocado, lime… I had something brewing in my head for a cool summer corn salad with shrimp. I wasn’t sure how I’d do it, so I went home and threw something together.

Fresh Corn and Shrimp Salad

Makes 3 servings

Ingredients
1/2 lb. cooked shrimp
3 ears of corn
1 jalapeÃąo, diced and seeded
1 red bell pepper, chopped
1/2 pint cherry tomatoes, halved
salt and pepper to taste
Adobo seasoning to taste
1/2 avocado, sliced
juice of 2 limes

Directions
Carefully cut the corn off the 3 ears. Cook briefly in a hot pan, then add jalapeÃąo and red bell pepper until corn is cooked and peppers are slightly softened, but still crisp. Remove from pan and allow to cool. Cook the shrimp, and lightly season with Adobo and S&P. When the corn/pepper mixture is cool, stir in shrimp, halved tomatoes, and lime juice. Top with avocado and serve.

This was refreshing, satisfying, and amazingly delicious. The only thing I wish I’d done was had something a bit heartier, like some barley or quinoa, to stir in there too. Honestly, it didn’t NEED it, but it would’ve extended the servings a bit. I’m looking forward to having leftovers tomorrow, that is, if we don’t finish the servings tonight! It was beyond nice to cook again… I’m hoping that the down swing of camp will cue an upswing in cooking!

I have to tell you, I honestly lost track of camper quotes today. There was a lot of talk about butts for some reason… I know you’ll love these!
  • “Mara! I can squeeze my butt together!”
  • “I’m not a chicken. Chickens poop eggs out their butts.”
  • “Guess what? My butt is named Spiderman, and yours is Superman!”

Thats it for today… you got a recipe AND camper quotes! The goal is at least 3 cooked meals this week, since I have dinner plans tomorrow and Wednesday!

Overnighter (plus) Birthday Party Recap (plus) Some Cuteness

I think I’m finally back to normal… yep. Finally.

I left for work at 6 a.m. Friday morning, and didn’t walk back into our house until 3:30 p.m. yesterday! Granted, there were some other events in there besides just work, but it was certainly a long day (and a half)!

Friday was a normal camp day until 2:30 p.m. when we boarded busses to make the (usually) 2 hour ride up to Waukesha, Wisconsin where our camp owns 17 acres and another day camp. Once a summer, we borrow their land and have an overnighter in tents, and pretty much have the biggest sugar-fest ever. We got stuck in traffic and the ride became 3 hours, and after some bathroom emergencies, we set up tents and then headed to Culver’s for dinner.

It was really amazing to watch kids order their dinner without having to wait for parental approval. I believe I heard “You mean I can have fries AND ice cream? AWESOME!” … and then there were stomachaches. It took quite some time to have all 110 kids order their food and eat, but eventually we made it out and on to a HUGE indoor water park. I have to say, the best part of the night was the 20 minutes I got to spend in the hot tub with one of my friends! Every year, we take a version of this picture, and we ended up with about 4 this year:

Once we arrived back at camp, we built a campfire, made s’mores, watched movies on a huge outdoor screen, and I eventually crashed about 2 a.m. while the pre-teen and teenage campers ingested more caffeine, sugar, and energy drinks than I’ve ever seen. Needless to say, they all crashed on the bus ride home!

At 11 a.m., all my campers had been picked up from OUR camp, and then I headed to the spa where I had appointments to use the gift certificate from Adam. After being scrubbed, massaged, rubbed and polished, I headed home to get ready for my birthday party!

Friends and family met up at the Yard House for dinner and drinks. While we were waiting for our appetizers and dinner, I opened gifts. Some were useful (a skirt and bracelet from my friend Kristin, soap and a candle from my friend Josh, and kitchen tongs from my mom) and some were silly (sushi erasers and magnets from my “aunt”) and some had a theme. Since it was my golden birthday, I got a series of golden things!

We started with some appetizers on the suggestion of Adam, who had eaten at that restaurant far more often than I. We got lobster and crab dip, onion rings, and I chose a grilled artichoke. The onion ring tower was gorgeous AND delicious!

Then, since I couldn’t decide what to get, I went with another of Adam’s suggestions, and I’m SO glad I did! This is a crabcake hoagie with tomato, lettuce, bacon, and cheese. NOT a healthfood item, but I did my best to lighten it up. I got the sauce on the side, and half the cheese, and removed half the bread. Oh, and my mom stole my pickle.

Adam got quite possibly, the biggest and most delicious salad I’ve ever seen in my life! It was a BBQ chicken salad, and I have no idea what was on it, but it was GOOOOD.

Of course there was beer, since the restaurant is famous for their selection of tap beers (over 100!), so I got a Woodchuck Pear Cider, which, as soon as I find in bottles will start residing in our house. They brought me a surprise tiny dessert, which I shared with my mom and Josh… just the right amount of PERFECT chocolate cake!

We finished eating and then headed up the street to Pinstripes, a very posh bowling alley. I bowled a great game (got 77!) and Adam had the high score of the night at 145, though Kristin and Steve gave us all a great challenge. At about 9:30, it started to hit me that I’d only had a few hours sleep the night before, so once our game was over, we headed home. It was when I walked in the door that I realized “OH CRAP! I forgot to do Cute Food Saturday!” I felt so bad… but I didn’t have the energy to do a whole post last night.

So you get some cuteness today!

A Golden Day

My birthday was just fantastic!

I’m exhausted, as is expected after a 6 hour day at the county fair in the sun with 8 little girls, but it was really truly, a great day. Adam came with me, and we had the pleasure of eating fried cheese curds, sharing a corn dog, fresh corn, and countless sugar-free beverages. He also helped the campers see the (invisible) nocturnal bunnies in the rabbit exhibit.

Every time my phone would make the little “message” noise, it was another Happy Birthday message from one of my amazing friends or family members, and each one truly made me smile. Thank you to ALL of you for making my day!

Quite a few campers had handmade cards for me, and let’s just say I won’t be paying for coffee for quite some time. A HUGE thank you to all my campers’ parents for the cards and gifts :)

After the fair (of which I have TONS of pictures I can’t post due to privacy issues), my sister, mom, and stepdad stopped by camp to say happy birthday and give me a couple gifts. I got gold flip flops from my mom, and a handful of little books from my sister, including a palm-sized Joy of Cooking! It was so great to have everyone I love in one place on my birthday!

When we finally got to leave camp, we headed to one of my favorite sushi places for a quick, non-fancy, yet amazing sushi dinner. Yes, I’ve had sushi 3 times since Saturday… I have a problem. Anyway, we started with Kani-Su, a mixed seaweed salad topped with crab, gourd, and a shrimp.

Then, we got some miso soup I didn’t eat, and then the plate of rolls came. Somehow we managed to order the most tempura-crusted rolls and sushi on the menu, but honestly? It’s what I wanted! I really don’t remember what was in all this, but it was quite delicious!

And, as a special treat, I got 2 pieces of avocado sushi, topped with eel sauce:

Then, at the end of the meal (without the embarrassing birthday candles and song!) came some mochi ice cream ball pieces that I ate with the included toothpick. 2 were chocolate, and the other 2 were orange sherbet.

When we got home, Adam gave me my birthday gift from him that I could tell he’d been itching to give me all night! I know what I’m doing Saturday!

A 50 min. massage, pedicure, and olive oil body glow from a local spa, and an Eye-Fi wireless SD card for my camera! I’m so beyond excited!!! Thank you Adam!

We have 2 quotes of the day, one that Adam heard, after he asked a girl why she was pouting. Her answer? “That girl is trying to be the boss of me!”
The one I heard: “Can I use my new rope to lasso balls?” (TWSS!)

I’m falling asleep as I type, so I’m signing off… officially 29! This is the year I get married!!!
