Latin-Inspired Black Bean Chicken

Ingredients

3 large chicken breasts

1 can chicken broth

1 cup water

1 can black beans, rinsed

2 Tbsp. chili powder

1/2 tsp. chili flakes

1/2 tsp. Goya Adobo (or other seasoned salt or garlic powder)

1 tbsp. red wine vinegar

1 onion, chopped

2 cloves garlic, minced

1 tbsp. olive oil

Directions

Heat oil in a large pot. Add onion and garlic, and cook until caramelized. Add chicken and other ingredients. Bring to a boil, then reduce heat and simmer, covered, about 45 minutes. Shred chicken and serve.
