30 Days
One of the Language Arts classes at my school (Hi Mrs. Lance’s class!) has started a 30-day challenge and opened it up to the staff to participate. My 30-day challenge? To eat and photograph at least one healthy meal a day. Does that mean that EVERYTHING I eat will be healthy? Not necessarily… but I’m hoping this challenge will encourage me to eat more healthfully every day.
I started over the weekend, 1/29, so that is my day 1.
Day 1 (1/29): Made homemade whole wheat bread (this x2) for use throughout the week.
Day 2 (1/30): Barbecue pulled pork sandwiches, made healthier with lower sugar, and by skimming off extra fat

Day 3 (1/31): wrap with Italian sausage, grilled peppers, light laughing cow cheese… Yum!

Day 4 (2/1): breakfast! Greek yogurt with strawberries, bananas, an 7 grain puffs
Day 5 (2/2): Itty Bitty Burgers! (Low fat meat, whole grain rolls, reduced fat cheese)
Day 6 (2/3): I had a hard time with photos today. But, I did eat a very healthy lunch: turkey and veggie sandwich on whole wheat bread!
Day 7 (2/4): Only took photos of Mr. & Mrs. Keller (Kacz)’s wedding, no food. Lunch was salad, dinner was steak!
Day 8-9 (2/5, 2/6): Made fish and seafood stew and whole wheat bread. Ate it for two days
Day 10 (2/7): Made and photographed this delicious casserole with lean ground beef and low-fat bacon (yes, it exists!), the noodles were whole wheat.
Day 11 (2/8): Dinner at Chipotle with Mr. Jonker after a scholastic bowl meet. I love that they have brown rice now, and guacamole makes everything better
Day 12 (2/9): Mr. Rosenbloom made healthy crispy chicken with three dipping sauces. It was nice to have a healthy meal made by someone else!
Day 13 (2/10): I failed today. I hardly left the house, spent most of the day cleaning and making crafts, and food was an afterthought. We had pizza for dinner…you know what that looks like!
