Chicken Caesar Salad Pizza {Giveaway Post}

Every once in a while, I forget about how much I love parmesan cheese. I know, it’s an odd thing to forget, but I’ll go weeks without a taste, and then out of nowhere, I put it on everything.

In college, my fridge was never without at least one (sometimes more than one) container of parmesan cheese, which I put on just about every dinner. My friend Ericka can back me up here, my dinners were a rotation of parmesan-tuna noodles, parmesan-lemon-chicken-noodles, chicken parmesan, and the occasional Mexican dish. Needless to say, I’ve branched out.

Usually, these days, it’s a recipe that brings me out of my parmesan lull… among other things. I’ll get to the other things in a minute. But this recipe is something that my friend Erin has been telling me about in our near-daily carpool. I put it in the back of my mind, but I had her really teach me the recipe today, and I’m so beyond glad that she did.

Now, this is not your average salad pizza in which a pizza crust is baked and then topped with a cold salad. Those are delicious, but this… this is really something special.

It starts with a batch of my favorite perfect whole wheat pizza crust.

Then a thin layer of Caesar salad dressing (I used whichever one it was that Erin suggested).

Then a hefty helping of fresh spinach, probably about 3 cups.

Then parmesan cheese.

Then diced garlicky sautéed chicken.

Then more parmesan cheese and more caesar dressing.

About 20 minutes in a 425°F oven on the pizza stone and magic happens.

This definitely reminded me how much I adore parmesan cheese, but the big reminder actually came a few days ago. A friend of mine got me in contact with a relatively new cheese company in the Chicago area selling new and deliciously flavored parmesan cheeses. They offered to send me a sample, and I was blown away by their generosity. We got one of each amazing flavor! We’ve been loving the garlic parmesan, and Adam has put the red pepper one on just about everything.

    Parmesan… yum. Yael and I actually like it sliced. I’ve been trying to convince Yael it isn’t polite to eat it with your fingers from the shaker.
