Swirly Girly Cookies

You see, a good friend of mine, Nicki, from work is having a baby girl (sooner rather than later we think) and her work shower was today. I love helping out with wedding and baby showers when I can, and Nicki and I have been close for years now. We got hired at the same time, and for two entire school years, I taught my class in her room when I didn’t have a home room to call my own.

Usually, at least for family functions, I make the cupcakes. Another coworker had taken care of that and did a remarkable job!

She used my white cake recipe, and as usual, I was tickled to see that the recipe worked and was as good as when I make them!

Anyway, back to these swirly girly cookies. I wanted to do something cute, something girly, and yet something not too “baby”. So many ideas for baby showers are SO corny… So I went with a very basic recipe from AllRecipes.com with a few adjustments. I used half again as much vanilla as suggested, one cup of butter instead of the 1 1/3 suggested, and gel food colors instead of liquids. The dough was a dream to work with, and I cannot wait to play around with flavors!

Swirly Girly Cookies

Ingredients (60 cookies)

  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 2/3 cup packed brown sugar
  • 1 cup white sugar
  • 2 eggs, beaten
  • 2 1/2 teaspoons vanilla extract
  • Desired colors of gel food coloring

Instructions

Sift the flour, baking powder, baking soda, and salt together into a bowl. Resift again into another bowl.

Beat the butter with the brown and white sugars in a mixing bowl until light and fluffy. Beat in the eggs and vanilla until smooth. Gradually stir in the flour mixture until evenly blended. Form the dough into a ball, cut in half, and place in a mixing bowl. Add the desired food colors and mix with a wooden spoon until evenly distributed. I used pink and purple.

On waxed paper, roll out the pink dough to 1/4 inch thickness. Roll out the green dough to 1/4 inch thickness, and place on top of the red dough. On the longer edge of the dough, begin rolling together so the colors spiral inside each other. Wrap in waxed paper and freeze for one hour.

Preheat oven to 400 degrees F

Lightly grease 2 baking sheets.

Unwrap the dough log, and place on a clean, and while still on waxed paper, slice into 1/4″ slices. Place on the cookie sheets.

Bake in preheated oven until set, 5 to 6 minutes. Watch carefully to prevent edges from browning. Remove from oven, and cool on racks.

They were pink, purple, crispy, sweet, and very vanilla-flavored…and a huge hit at the shower! I love when people “just can’t believe” that I made something. I got a few “You made pinwheels?? NO WAY!” It was definitely fun to see.

I spent many hours over spring break creating Nicki’s shower gift as well… who apparently liked my cookies too.

Love the cookies and the cupcakes – now if I could have someone deliver them to my house, that would be fantastic. I don’t have time to bake lately – those look so good.

I’ve only tried swirly cookies once and it was sort of a disaster. I think I might try again with this recipe :)
