Besides being Easter (Happy Easter!), today is Adam’s birthday!
We spent a lovely day downtown yesterday, had a simply fabulous meal, and enjoyed each other’s company. Today has been, at his request, a lazy day. I made biscuits and gravy for the third consecutive year, had successful biscuits thanks to a pastry blender I borrowed from the home ec room, and also made Adam his birthday treat.
After last year’s “full-sized cake“, the prior year’s red velvet cupcakes, and the year before’s cherry pie, I wanted to do something different. Adam made a comment the other day that stuck in my head.
“You know, I love chocolate chip cookies. I think I’d take chocolate chip cookies over any sort of cake.” I think he knew what he was doing. I asked him flat out, “What about cookie cake” and he got the don’t-you-dare-think-about-it face and said “no way. Cookies.” Ok then.
So this morning at 7:30, I was googling chocolate chip cookie recipes and found this post by Two Peas and Their Pod, linking me to Alice’s recipe from Savory Sweet Life. These were reminiscent of the cookies I ate growing up. More brown sugar than white, lots of mixing, lots of chocolate chips, and a promise to be both crispy and chewy. Besides, I trust anything that Maria recommends.

The cookies smelled glorious in the oven…so much so that I was worried the smell would rouse Adam from his pre-determined “sleep-in day”. It didn’t.
I presented this cookie-as-cake platter to Adam, complete with lit candle. I wasn’t satisfied with the photo though. You have to see exactly how beautiful the stack was. Mind you, we each had a couple pieces of the “cake”.

Knowing that the stack of cookies brought Adam a bit of joy on his birthday makes me happy, since he’s been the most wonderful husband anyone could ask for.

I have to think that I’d take a cookie over cake too – not too much of a fan of frosting.
