PHEW! I think I’ve finally recovered from my über-long work day on Friday-Saturday! It was the first of two camp overnighters, and I was out of my house from 6 a.m. on Friday until nearly noon on Saturday. I then proceeded to sleep away Saturday afternoon.
Upon waking up, I found that the mailman had brought a package for me from Eugene, Oregon… that’s my dad! I tore into it, and found two posters (of which I couldn’t get a good picture, I’ll try again soon) and a various assortment of goodies:
So, my dad reads the blog and has apparently noticed my newfound obsession with cupcakes. From the left, that’s cupcake chapstick, cupcake bandages, cupcake dental floss, cupcake mints, and a cupcake magnet. In the center is Fairy Egg bubble gum… I have a small thing for faeries as well… Thanks dad!!
Once I was officially awake, Adam and I decided to go to the Weber grill restaurant for a late dinner, and I ordered one of my favorites of late: skirt steak with grilled onions. It was fantastic, and I thought about it most of Sunday. I asked around on Facebook and Twitter what I should cook for dinner, but the answer was clear in my head: more skirt steak!
I went to the produce market and got the steaks and various vegetables for grilling. Unfortunately, Mother Nature had other plans, so everything ended up being cooked either stove top or in the broiler. Around noon, I put the steak in a newly-created marinade which has endless possibilities when it comes to uses.
Balsamic Dijon Basil Marinade
Whisk together:
- 2 hefty Tbsp. good dijon mustard
- 1/4 c. balsamic vinegar
- 2 Tbsp. olive oil
- 3 garlic cloves, crushed
- 1/2 tsp. salt
- 1/4 tsp. fresh ground pepper
Then add in:
- 7-10 large basil leaves, torn into small pieces or chopped
Then, this is the fun part:
- Using a wooden spoon, smash (or muddle, I guess is the technical term) the basil into the marinade. It should look much like a not-very-well-blended Green Monster.
Add your protein of choice, and allow to marinate at least 3 hours but up to 12.
