Well, I spent today roasting in my classroom. (No windows + 2 fans = stuffy classroom!)
I spent my commute home roasting in my car. (Car A/C + stuck in traffic in the sun = not so cool)
I spent my early evening roasting… food! We’re still trying to figure out what’s up with our grill, so in the mean time, I’m making food normally cooked on the grill in the oven! Since I’m tired and need a shower, tonight’s post will be quick.
On this lovely plate: Roasted asparagus, pan-roasted eggplant and mushrooms, roasted balsamic steak, and pan-roasted polenta squares, all topped with a sprinkle of Alouette gorgonzola.
Roasted asparagus: sprayed with olive oil, then dusted with garlic powder, roasted at 475 for about 25 min.
Pan-roasted eggplant and mushrooms: Cooked slowly in a frying pan with garlic powder, salt, and a little oregano.
Balsamic flank steak: Make a marinade of balsamic vinegar and olive oil (equal parts), and sprinkles (about 1/2 tsp. each) garlic powder, oregano, thyme, basil, parsley, salt and pepper. Pierce meat a few times, then marinate 1 hour. Sear in an oven-safe frying pan on both sides, roast in the oven with the asparagus about 20 minutes.
Polenta squares: Boil 4 cups of water. Sprinkle 1 cup cornmeal over the water while stirring. Lower heat, cover, and simmer, stirring occasionally until thick. Add 1/4 c. grated parmesan. Pour into a shallow baking pan and allow to cool. Cut into squares, then triangles, and pan-roast/fry until crispy.
Yep, that’s it. Simple, delicious, filling, and nutritious. I believe that’s key for a satisfying meal… oh, and it didn’t hurt that stabbing that steak totally helped me get the residual annoyance from the day out! The end of the year is hard on all of us…

We had a grilled dinner like yours – veggies, meat, and starch all out on the grill. So yummy! This weather is utterly DISGUSTING. I can’t imagine yuor poor classroom!
