How often is anyone actually inspired to cook something based on a lunch served by a middle school cafeteria? Honestly? Not often, I don’t think. Unless you’re me.
See, two days ago when I went to the cafeteria to pick up my big salad, I noticed some of the students eating something delicious. It was doughy, full of sauce, cheese, and pepperoni, and smelled divine. Our cafeteria cook had made calzones for lunch, and they looked fantastic! Of course, this got stuck in my brain, and all I could think about were calzones.
Tonight was the night! I broke out Biz’s 5 minute pizza dough recipe, bought reduced fat mozzarella cheese, turkey pepperoni, and some local pizza sauce, and threw together that which I’d been thinking about for days… and it was glorious:
















I looooove calzones! Of course yours looks delish and a lot healthier than our post-drinking late night college calzone runs!

My husband and I just had a convo on those infamous school lunches. The legends that we remembered were Popcorn chicken (little nuggest of deep fried chicken that I don’t really think contained any meat) and grilled cheese. I remember kids going CRAZY over these lunch days.
Lucky for me, I do recreate these dishes, only in a more sophistocated fashion. The love for the classic will always remain, but now, it’s just slightly improved.

We made pumpkin ice cream at home 2 nights ago. We did it for the whey factor – but you’re right! I didn’t even think about how much fat we probably saved ourselves b/c we used 1% milk!

Haven’t had a calzone in years – gosh that looks good! Score on the ice-cream find. I’ve gone a bit crazy with the ice-cream maker these days. More experimenting tomorrow.
