What a fun afternoon! It was my friend Heidi’s work baby shower which I helped plan, so I spent the afternoon setting up and noshing… Check out the gift spread, the food spread, and of course the happy mom, and the cake made out of diapers that my friend Wendy made. She’s the woman who made our wedding invites…she’s obviously quite talented!

I made my buffalo chicken dip, and managed to eat a good amount of that, a few cookies, and some marble fudge cake… when I got home, I didn’t get hungry til about 7 p.m. I set out to make the dinner I have been wanting for at least a week now… Sloppy Joes! Now, we all know that sloppy joes, Snobby or not, are NOT the most photogenic things in the world. So, I decided to show you a snapshot of my sloppy Joes with my favorite vintage poster…
And the recipe, makes 5-6 servings:
Ingredients
1 lb ground beef, turkey, or meat sub
1 small onion, diced
1 red bell pepper, diced
1 Tbsp. olive oil
1/2 tsp. garlic powder
1 c. ketchup, preferably organic
1 1/2 Tbsp, Dijon mustard
2 Tbsp. brown sugar
S&P to taste
Directions
In a skillet, heat the olive oil, and then add the onion and red pepper. Cook until softened. Add the ground meat, and brown well. Add the remaining ingredients, lower the heat and simmer about 15 minutes. Serve on bread, buns, or rice.
I ate mine, as I called it when I was little, “open head”. I’ve always eaten my sloppy joes open-faced for some reason… and I love them! I feel weird eating them as a sandwich.
I still have a bunch of crocheting to do, and mega-uber-big TV shows are on tonight! Grey’s and Private Practice are 2 of my favorites, and they’re BOTH on!
YOU should check out, however, Rose’s new feature on her blog called Worker Bee, which features bloggers with real jobs who still manage to incorporate healthy living. Her first post features yours truly!!
I’m off to crochet… have a great night, and TGIAF!!!!!

Don’t tell, but we love ultra-unpersnickety lentil snobby joes. I know, I know. But really? They are so good. So, who cares; though the vintage poster was a nice addition to the photo! That’s actually a good tip I’ll have to remember.
The baby shower looks like a success. Especially if there was marble fudge cake present…
