Slow Down & Savor (Giveaway Post)

It’s finally starting to really feel like fall here in Chicagoland… the leaves are starting to change, and there’s a cool breeze in the evenings that almost requires a light jacket. There are quite a few dishes that will eternally remind me of fall: warm homemade applesauce, prune plum compote, Italian pot roast, and Neapolitan casserole. Most of those dishes, well, with the exception of the pot roast, were things that my mom would cook in the first few weeks of school, usually right around the Jewish High Holidays.

The only thing with these recipes is that they take a long time to cook. They require patience, low heat, and generally a slow pace. There’s nothing quite like any of them, and you’ll see all of them here soon. But tonight, I had the insane fall craving for the Neapolitan casserole. This recipe dates back to the 1940s from a cookbook by Antoinette and Francois Pope called The Antoinette Pope School Cookbook. I wish I had a copy of it, but I do have this one recipe that I begged my mom for years ago. I’ve adapted it to be a bit healthier, and of course omitted mushrooms for Adam.

Healthified Antoinette Pope Neapolitan Casserole

Adapted from The Antoinette Pope School Cookbook

1 lb. ground beef or turkey

1 lb. whole wheat pasta, cooked and kept hot

1 6 oz. can tomato paste

5-6 strips bacon, cut into small pieces

1 green pepper, diced

1 sweet onion, diced

parmesan cheese

1 tsp. oregano

1 tsp. baking soda

2 c. water

1 tsp. garlic powder

Directions

Preheat oven to 350*. Heat a large frying pan and add the pieces of bacon. Cook until crispy, and add the onion and peppers. Cook until onions are transluscent and peppers are softened. Add the ground beef or turkey. Cook until meat is cooked through. In a casserole dish, put 1/3 of the cooked pasta, 1/2 the meat, and a generous sprinkle of parmesan. Repeat with another third of the pasta, the rest of the meat, and more parmesan. End with the pasta. In a separate vessel, mix together the tomato paste, water, and baking soda. Be careful, as it will froth up! Pour the tomato mixture on top of the meat and noodles and bake for about 25 minutes. Top each serving with parmesan cheese and enjoy!

This brings back a taste of childhood and fall for me…and I was thrilled to eat it tonight! Something about the chopping and sauteeing and baking and waiting that was so comforting.

One of the ways I slow down and savor is a visit to the local apple orchard to remind me that although the wonderful summer weather is gone, fall brings its own wonderful snap of crisp local apples. The pumpkins and harvest corn make me slow down to take time to decorate for my favorite season!

My *favorite* way to slow down and savour the Fall is to spend a whole weekend in the kitchen. Saturday is for making chicken stock from scratch. Sunday is for making Matzoh Ball Soup using the stock and the schmaltz from the stock making process. And, you know, I usually make a quick bread or easy cake or something, too, because…well you know.

I spend one day cooking 3 days of meals in advance for the freezer so I have a break. I can slow down and savor times with friends and family and meals are cook to fix.

Fall is by far my favorite time of year. I find myself slowing down and enjoying the changing of the season by opening up the windows and inhaling in that first “smell” of the new season. And when the windows are open, many times I can hear the marching band from the local high school practicing. Football = fall! It doesn’t hurt that I begin to surround my home with the colors and flavors of fall too. Let the pumpkins abound!!

I’d say – cook a nice family roast – but you know my daughter ate hers in 7 minutes and left the table to finish packing for college. So, after you serve, tie your kids down.

When it gets cold–I get out my crockpot—then I can slow cook chili, or stew and relax with my family while dinner is cooking–especially on rainy or snowy days when the kids can’t play out doors–we get a fire going and play Cranium with the kids while the crock-pot is cooking our food.

What a beautiful set – and cheese! Well, what could be better?

I slow down & savour the Fall by baking more — and I would suppose just more cooking in general. In the Summer I tend to cook lots of easy meals and usually try to get out of the kitchen as fast as possible. But when Fall comes around, I do slow down and enjoy spending more time in my kitchen – baking and cooking for my family.

In fall, I like to sit out on the deck under the trees, look at the leaves, nap, read a book, have hot chocolate. I love it when the wind blows the leaves and makes that rustling sound.

I keep telling my husband that the Fall is here and Summer is over. He is holding on to the last few days of summer trying not to be fall but it is my favorite time of year. The fair is here. School busses are passing our home in the mornings and the leaves are beginning to turn. Just observing these things makes me giddy and the observation allows me to slow down and savor the moments in life.

I think the best part about fall is making breads. Taking the time to make the bread, waiting for it to rise, and taking it out of the oven and smoothing warm butter on it.

I love fall because of back to school time. So I literally slow down while driving to be more alert for children in the streets. It is fun to watch them with their new bookbags and shiny new sneakers ready to start another year of learning. That is what the changing season means to me and why I must slow down.
