It’s been a lazy Friday afternoon, which is just what I needed after this SUPER LONG short week. Does anyone else have this happen? Short weeks seem really long?
We went out when I got home from school in search of a printer. We started at Best Buy, and ended up at, what I call “Nerd Heaven” as it used to be a store strictly for people who build their own computers. Now, it’s a haven for cheap computer supplies and peripherals. We ended up with a GREAT printer for a great price… and in the meantime, I talked to our wedding coordinator at our venue and set up a meeting where we’ll decide what our menu will be!
We’d had a snack of Asian Noodle House at about 4 p.m. which, after my salad lunch, was more like a 2nd course. I seriously thought that I’d be good for the night food-wise, but when 8:00 rolled around, we were both hungry again. I wasn’t surprised, since that’s ALWAYS what happens to me with any type of noodle.
Adam offered to “throw together” a meatloaf, and since I was feeling über-lazy, I was happy to oblige. Since he’d never made a meatloaf before, he asked for a bit of help, but it turned out to be a delicious late-night snack/2nd dinner/reason I can’t lose weight (night snacking, not meatloaf).
The picture is lousy, as it is late, and the light is lousy. And, I have never seen a truly photogenic slice of meatloaf!
Adam’s Lovely Loaf
Ingredients
1/2 lb. lean ground beef
1/2 lb. lean ground pork
3/4 c. rolled oats
1/4 c. milk
1 Tbsp. olive oil
1/4 tsp. garlic powder
2 tsp. dried minced onions
1 tsp. parsley flakes
2 Tbsp. plus 1/4 c. ketchup
Directions
Mix the two meats together thoroughly, then stir in each ingredient and 2 Tbsp ketchup. Form into a loaf, and bake at 350* for 15 minutes. Top with remaining ketchup, and bake an additional 15 minutes, or until juices run clear. Allow to rest a few minutes, then slice and serve.

This week went by very slowly for me, too!
I love a good meatloaf recipe! I am definitely going to try this. I have heard that beef + pork together are really delicious. Go Adam!

I agree, sometimes short weeks seem extra long, but I’m definitely most excited that it’s the weekend.

Yep, why is that? Those “short” weeks are always the worst. Feels like they go twice as long. I think it’s because we automatically think that it will go by fast and then put ourselves into that mindset.
Oh well, at least its over now.
