After days and days of eating out, I finally got around to cooking something! When we were at Valli yesterday, we perused some of the aisles that we normally don’t go down, and I found, for a whopping $2.99, a tub of arborio rice.

What does one make with arborio rice? Why, risotto of course! Adam has been asking me for months to make the pea risotto seen on Gordon Ramsey’s Hell’s Kitchen. His risotto recipe includes fresh peas, asparagus, and langoustine, so I figured I could come “close enough” for a Thursday night meal.

I followed the basic risotto recipe on the back of the tub of rice, and then added in my own extra ingredients. The result? A fresh-tasting, super-simple risotto!

Ingredients

2 c. arborio rice

5 c. chicken stock, heated

1 Tbsp. olive oil

1 Tbsp. butter

1 small onion, minced

1/2 c. parmesan cheese

1 small bag frozen peas

1 lb. cooked salad shrimp

1/4 tsp. garlic powder

salt and pepper to taste

Directions

Heat olive oil and butter in a pot or saucepan. Add onion and cook until transluscent, then add the rice. Stir until the grains glisten. Then add 1/2 c. of stock, stir gently, and simmer until all the liquid is soaked in. Repeat this, 1/2 c. of stock at a time until all the stock is gone. In a seperate pan, heat the peas and shrimp until hot. Sprinkle with garlic powder and some S&P. Stir the parmesan cheese into the rice, then add the peas and shrimp. Serve and top with parmesan cheese.

This made a TON of food, and I’m excited to bring it for lunch tomorrow! The only thing that would’ve made it better would’ve been mushrooms, but we all know how Adam feels about those. Maybe next time…

Thankful Thursday

I know many of you have done “Thankful Thursday” for months, even years now… but I feel the need to jump on the bandwagon this week. I just have to let you all know how very thankful I am to have Adam in my life. He never ceases to amaze me with little ways to show me he loves me, and no matter what BS I may be going through at any given moment, he’s always there. I love you, Adam, and can’t wait to be your wife in a mere 78 days!
