That looks like the perfect, simple, summer salad. Well, sans tomatoes of course But seriously – corn, shrimp, avocado? Yum! If you wanted to extend it a bit more, you could always serve it over salad greens as well.

This salad has so many of my favorite things! And it just looks so fresh and summery. I am bookmarking it
I haven’t been so great about my veggie intake, either. GM’s always help out because it’s like you’re sneaking veggies to yourself secretly…hehe.
