Happy Thursday everyone! For most of you, you’re looking forward to the weekend… but alas, tomorrow begins my Summer job! We have our first day of counselor training/camp prep from 8a.m. til 3 tomorrow, and then open house for the parents and kids on Saturday. I’m pretty excited for another summer of one of my favorite jobs ever, but I do have to say: another couple days off would’ve been nice!
Adam and I had a nice afternoon together today though! We went to Panera for soup (I got a great Summer Corn Chowder) and then we went and got me some Früz! Today, I got peach and strawberry blended yogurt. We ate kind of late, so we weren’t terribly hungry for dinner… So a simple and light dinner it was! I’m going to Hungry Mouse it up, if you don’t mind.
I started with two slices of fresh Artisan bread from our local produce market.

Then, I added some (GASP! PROCESSED!!) fat free mayo.
Next came 2 huge leaves of fresh romaine lettuce.
And a sliced tomato (yes, a whole sliced tomato)
Then, as Sophia reminded me yesterday, I added the thing that makes everything better… bacon! This was very well-done center-cut bacon. In case you don’t know, center cut bacon has significantly less fat once cooked than regular bacon. It’s worth the extra $1!
Then, I closed the sandwich to enclose everything in the delicious (albeit very white) bread.
Finally, in order to make it easier to eat, (ok, and for a cool blog photo) I cut the sandwich in half.
I loved that the slices of bread were thin yet still hearty, the tomatoes are perfectly ripe, and using the crispy bacon and fresh romaine just made this sandwich something simple yet special. There may have been another one consumed after this one as well…
Thanks for all the well-wishes yesterday… I swear they worked! My cold is significantly better! I just hope I’m all the way better by the time my group of 12 4-year-old girls comes for their first day of camp on Monday! The sneezing and coughing just needs to stop!

Mmmm, bacon. I wish I liked tomatoes, because I would so eat BLT’s! Actually, I used to order the BLT sandwich from subway, and get them to pile on the pickles instead. It’s pretty tasty, but talk about sodium!

When I was in college I loved getting BLTs, but they were not on the “menu,” only turkey clubs with bacon were. It was always a huge production for me to get one. They didn’t understand that they could in fact make it for me. Then when they got that part they didn’t know how much to charge or anything. Needless to say, yeah BLTs are perfect!

This might sound like a crazy question- but I like my bacon crisp, but not burnt. I can’t stand it when it has uncooked fat on it. But when I try to cook my bacon I end up burning it to a crisp, so while there is no fat, there is also no flavor.
Any suggestions?

I can’t remember the last time I had a BLT but man, they are good. Especially with good bacon. I don’t know if they have California Pizza Kitchen in Chicago, but they have a BLT pizza than I remember being especially tasty.
