Remember when you were in school and there were only a handful of days left and every single wake-up got harder and harder because you knew the end was coming? Remember cleaning out your locker, maybe finding some long-lost assignments, those shoes you “lost” in the locker room, and maybe some nasty moldy food? Remember how the “work” your teachers gave you seemed less like work and more like games?
That’s where I’m at…except on the other side. I had no idea that the teachers were JUST as excited to be finished for the year as the students were until my first year teaching. I was seriously just as ready to be done for the year by the time the last day rolled around as I was when I was a student!
Today was the annual talent show, and 2 other teachers and I were in charge of it. I ran the sound board and, due to the fact that I was oh, 18” from the stage and maybe 3 feet from the amps, the last two bands that played just about blew out my ear drums! It was great though because my mom and David came to see the show! My mom and I took a really cute picture after the show, in my ear-ringing stupor. Thanks for coming Mom and David!!
The rest of the day, I was just spent. I made sure to stay hydrated today after yesterday’s pizza debacle, but all the diet Coke water in the world wasn’t reviving me. When I got home, I was hungry. Adam was hungry. So, we made like we lived in Del Boca Vista and went for dinner at 4:30 p.m. I know I could’ve had a snack and held off a little while and gone to eat at the same time as people our own age, but we decided against it and just went to our favorite Thai place for a little noodle/spicy/tofu action.
We started with one of my favorites: vegetarian spring rolls. They were a soft rice wrapper filled with lettuce, Thai basil, cilantro, bean sprouts, rice noodles, and cucumber. They’re served with a spicy and sweet sauce and are super refreshing.
I had a hard time deciding on my entree. Did I want noodles? Did I want spicy tofu? Did I want chicken? I finally decided on an old favorite, and in fact, a favorite of my mom’s! It’s called Larb Kai, and its a ground chicken dish with onions, red peppers, spicy Thai chiles, scallions, cilantro, lime juice and rice powder. It’s also quite refreshing, and very light. I brought about half of this home!
Adam got one of our favorites, Pad Si Ew, but with tofu instead of our usual chicken. I may have had a few bites of this as well! I’ve got to try making this one day soon!
We decided to split a favorite dessert too, Thai custard. This is something that we both could eat a lot of. We actually tried to guess tonight how many pieces, exactly, that we could eat before getting sick. My estimate was somewhere around 5. This is part of the reason we order only ONE and share it! Its delicious coconutty goodness was just what I needed!
After we finished eating, we walked to this cool toy store to look around, and then headed home. It’s only 6:30 p.m. and I’m in my PJs and doing nothing but watching TV… and I’m delighted! I have a pretty fun weekend planned of doing, well, not much! I have a blogger meet-up for Yogen Fruz tomorrow, and then a day at the pool planned for Sunday!

At my kids elementary, the teachers would do the line up with kicks as the busses rolled out. They were pretty darn happy.
Linner is great stuff because sometimes you get the wait staff all to yourself, makes you feel special. I’ve never had Thai Food, but someday… that’s what happens when you live out in the middle of farm land.
