SUNDAY
I started my Sunday with a field trip to a relatively new Whole Foods about 40 minutes away to meet up with Jenn and another foodie friend for a hot bar lunch. It was such fun, and I was in such Hot Bar withdrawal! I had literally not set foot into a Whole Foods in about 4 months! We of course, had to take a picture under the Hot Bar sign:

After lunch, I headed home and wrapped the present we got for Skylar. (Skylar is my best friend Lizz’s daughter!) I had no idea that a four-year-old was so hard to shop for! We ended up getting her this awesome sprinkler toy. Seriously, where was this thing when I was little?
Should provide hours of water fun!
Soon after I finished wrapping the gift, we hit the road to go to Skylar’s birthday party at…. CHUCK E. CHEESE! (said in a fake excited voice with clenched teeth and rolling eyes.) We walked in and soon remembered why we don’t generally frequent that place. The noise… the screaming kids… the way too low skee ball machine that made me tweak my back… oy! Only for this girl (and maybe our kids some day) will I set foot voluntarily into Chuck E. Cheese. After spending our tokens on skee ball, we got to sing “Happy Birthday” and eat cake! Just check out this cake!

The birthday girl was thrilled at her cake and adorable candles and couldn’t wait to blow them out!

I still can’t believe she’s 4 already! In my head, so much of the time, I picture her like this:

After the party at hell Chuck E. Cheese, Adam and I decided to go to Corner Bakery to get an actual healthy dinner instead of the junk from the party. I got quite possibly the BEST salad out that I’ve had in a long time! The Harvest Salad boasted “roasted walnuts, dried currants, grilled chicken, fresh Fuji apples, and crumbled harvest crisps” with a viniagrette I got on the side. I am most definitely going to try to recreate this salad because it was truly delicious! Those other crisps got crumbled in Adam's salad THEN, we headed back to Lizz’s house to watch Skylar open her presents. She had no idea what our gift was. Hopefully she’ll enjoy it eventually! (Are you still with me?) Today was an average, everyday, 85% humidity day in my school building! I had to empty my dehumidifier in my classroom twice throughout the day… quite gross and sweaty. My hair looked something like this at the end of the day: yup, that's about right. I did my usual trip to the grocery store with a major Jones for some red chili. Like, real, spicy, beany red chili. I have funny memories of chili, and I think Skylar’s birthday party yesterday triggered something in my memory. When I was a little girl, my birthday parties were “chili parties.” My mom would make HUGE pots of different varieties of chili (usually meat, vegetarian, and different spice levels) and her friends, and my friends parents would enjoy it while I opened presents. We joked later that it’s nearly impossible to make a small batch of chili. I cook my chili by sight and smell, and not by scientific amounts. I did my best to measure stuff today to share with you, but my best advice? Season to your own tastes! Topped with reduced fat cheddar, fat free sour cream, and 1/4 of an avocado Ingredients 1 lb. lean ground beef , turkey, or meat substitute 1 onion, diced 1 green pepper, diced 2 Tbsp. minced garlic 2 29 oz. cans crushed tomatoes 1 29 oz. can dark red kidney beans, drained 1 29 oz. can light red kidney beans, drained 1 14.5 oz. can Ro-Tel 1 14.5 oz. can salt-free corn, or same amount corn kernels 1/4 c. hot chili powder pinch red pepper flakes salt and pepper to taste 1 Tbsp. olive oil Directions Heat olive oil in a large pot. Add garlic, onion, and pepper, and cook until onion is translucent. Add your protein and brown thoroughly. Add all ingredients except the corn, bring to a simmer, and then reduce heat to low. Cook about 45 minutes, stirring occasionally. Add the corn, stir well, and cook until the corn is heated through. Serve! I love topping my chili with a myriad of things, including avocado. This is something I learned from one of my favorite vegetarian restaurants near where I grew up: Blind Faith Cafe. They top their vegetarian chili with soy cheese and avocado, and I just LOVE it! In addition, the extra little bit of fat helped me be completely satisfied with my one bowl of chili, as opposed to my usual two. I highly recommend it! Didn’t win??
