A Tasty Memory

As many of you may have done today, Adam and I went to a barbecue tonight! It was at my mom’s, so the food was sure to please… but little did I know that I would be leaving with a true Tale of Expansion! You’ll get to see what I made in a minute, but as usual, each person that came to the BBQ brought something delicious.

When we walked in, my sister and her significant other were preparing a platter of some of the most delicious-looking snack/appetizer food! Adam and I each had a small glass of wine (or 2) and enjoyed these munchies:

On the left, a bowl of pickled green beans and green olives, and on the right, a dish of roasted red peppers and artichoke hearts. The plate below was SO delicious, and I knew I wouldn’t remember what everything was, so I had Jared write it all down for me!

I would’ve been good with just this stuff for dinner, but Mom had more treats in store! First, I put my Caprese salad on the table. It was simple! Just fresh tomatoes and basil, fresh cow’s milk mozzarella, and some good balsamic vinegar and olive oil.

DSCN2662 Then, my mom brought out the main course… BBQ ribs, homemade bbq sauce, and her seriously amazing potato salad!

This was my plate, which was refilled with a few more ribs after this was finished:

DSCN2675 THEN of course, there was dessert! My sister brought a delicious brown sugar and rhubarb cake “thing” as she called it:

DSCN2676 And my mom made one of my favorite things: blueberry crunch! It’s the simplest recipe, and once I make my own I’ll post it, but for now, just a cute picture of my mom with her crunch:

DSCN2677 All in all, a very fun night! I’m not ready for the work week yet, but I guess I’ll have to deal with that in the morning!
