Happy Long Weekend everyone! Is anyone else ELATED that today isn’t the last day of the weekend? I spent today doing a bunch of things I rarely get to do!
- Much like Jenna yesterday, I went to IKEA! I ended up coming home with 2 packages of AA batteries, 36 pear-scented tea lights, and 4 glass tea light holders. I resisted buying a full set of patio furniture!
- While at IKEA, I had a great meal of Swedish meatballs! This lunch gave me an idea for a dinner later in the week!
- Introduced my friend Judee to the wonder that is Yogen Fruz
- Got home, put on my swimsuit (which fits quite well, thank goodness!) and went to our townhome association’s pool! I read a cheesy middle school book that a student gave me, dozed, and enjoyed being outside.
- Came inside, put on PJs, and napped! I never get to nap on Sundays as it makes me not sleep well Sunday night, which in turn makes Mondays miserable.
After I woke up, Adam and I went about figuring out what to do for dinner. Did I want to go to the grocery store and cook? Sorry, but no. So we decided to go out! Did we want Thai? Nah… Indian? Not tonight… Mexican? YES! The “genre” of food was decided, but then the dilemma of where to go came up. There is a VERY authentic and VERY unhealthy little taqueria, a more elegant place with some of the best mole I’ve ever had (which is made from 27 different spices and nuts), and then there’s La Magdalena.
This restaurant holds a very special place in me and Adam’s hearts… it’s where we had our first date over 4 and a half years ago! I will never forget sitting in the 3rd booth on the little elevated section, anxiously chatting and wondering if he would hold my hand or call me the next day. We haven’t been back much, ever since discovering the more authentic and traditional Mexican places in our area, but something about tonight pled for nostalgia. We walked in, everything was the same, except for our plans for dinner. When we first started going to La Magdalena, our plans for dinner always included chips and salsa, an order of guacamole, an order of fried cheese and chorizo empanadas, a full enchilada or burrito dinner each, and sometimes dessert. Tonight, we had a different plan!
First, we started with chips and 2 kinds of salsa. The one on the left was more mild, and the one on the right was quite spicy.
Then, we ordered guacamole. In the past, an order of guacamole meant an extra basket of chips, but not tonight! We made that ONE basket last through the guac and salsa. We had them take the basket away after it was empty. Then, they brought their complimentary “taco soup”… which is really some chicken noodle soup with taco seasoning in it. Not bad, but nothing special:
I ate a few bites of this and then our entrees came. I’d ordered enchiladas verdes (green sauce) and since I couldn’t decide on a filling, I got one each of beef, chicken, and cheese. The chicken was my favorite. Oh, and I scraped off almost all the cheese! Adam got chicken tostadas that looked fantastic!
The rice and beans were eaten, as were all three enchiladas and the little salad. BUT, this is the mound of cheese I had left over:
I’m really glad I scraped all that cheese off, because I think it would’ve put me over the edge fullness-wise. I’m slightly over-full right now, but it was a great meal!

Tomorrow I’m heading to my mom’s for a Memorial Day barbecue, and this week is sure to hold many adventures, but you’ll just have to wait and see!

Actually, my favourite meal (by far!!!) in Scandinavia was a real life Manager’s Dinner I had at a beautiful restaurant in Stockholm. I was such a happy camper! In fact I took a picture of my plate. I’ll have to post it on the blog sometime! lol

Mmm I could eat Mexican 4 times a week! We go to Casa Margarita’s and they give complimentary soup too. They also have a lot of buy 1 dinner get the 2nd free coupons, so they reel me in that way!
I also love the word “queue” – it’s fun to type and feels so wrong w/ all the vowels!
What book did you read? Was it any good? I love reading really cheesy novels every once in awhile. Esp. during the summer on the patio w/ a big glass of something cold. It’s more relaxing and summery than delving into a serious life-altering story.
