A Friend Date that is!!
When my friend emailed me and asked me if I wanted to go to P.F. Changs for dinner tonight, I jumped at the chance… good Asian-style food, out, on a Monday? Sounded great! THEN I found out that said friend had a) never been to P.F. Changs, b) never been to the shopping center its in, and c) had never had my beloved fro-yo, I Sharpied it into my schedule! I love helping people experience things for the first time!
I headed out of work at around 3:10, and then went to a local coffee shop/roaster to pick up a cup of coffee and some treats for a blogger care package. Conscious Cup is this fantastic little coffee shop right near work, and not only do they have amazing coffee, but they roast it all there! The smell was incredible and I had to get myself out of there, and quick, before I spent far too much money on coffee I don’t need.
As I pulled into my parking lot at home, my friend was pulling in too! We got into one car, and headed to P.F. Changs. We started with their famous Lettuce Wraps, made with tofu instead of chicken:
They were fantastic, as usual! I actually used a little bit of the “dipping sauce” that the waiter, rather unintelligibly described before we ordered. Then, the entrees came. I got my favorite, spicy sauteed eggplant with some unpictured brown rice:
The eggplant was cooked perfectly, and the sauce was sweet and spicy… I was pleasantly full when we left the restaurant and walked around a bit. I found myself gravitating walking quickly towards Yogen Fruz. As usual, I got a plain probiotic yogurt topped with strawberries, mangoes, and chocolate chips:
I love when they have full-sized chocolate chips instead of the mini ones… More to crunch on! I also love having Fruz on Mondays because, well, Fruz rocks and it helps get my week off to a great start! I hope that the rest of the week goes as well as today…because that would make for a great week!
There’s no guest for dinner. I guess I’ll just have to be lonely on here until someone sends me their dinner to mara@imadedinner.net! (Was that a subtle enough hint?)

I would LOVE to have PF Changs dinner with you!! I love those lettuce cups and eggplant is my favorite vegi ever. Plus, I (heart) Yogen Fruz.

sounds like a such a fun impromptu date! we do get lettuce wraps from our local chinese, and it looks similar to the PF changs – such a great dish! i wish we had more froyo places in the UK.

Mara, I am so envious of your PF Changs/fro yo night! Those are two foodie things that I SO miss about home. I’ve never tried the eggplant dish but now I really want to try it! Love those lettuce wraps though. And they have deathly delicious cocktails
nothing like a fun night out to start the week, and with frozen yogurt, no less…this post has inspired me further to try wiggs’ version of the lettuce wraps! ive never had that eggplant dish either, ill have to keep it in mind.

And I only had Yogen Fruz once — in El Salvador, of all places! So good though! Will have to scout it out next time we’re in the windy city!

To be honest, I’ve only been to PF Changs once 5 years ago and don’t really remember it. hehehehe The eggplant is a fabulous traditional chinese dish my momma used to make at home for me!! yyumm you have great taste Mara!
