I also had a leftover zucchini from yesterday’s ratatouille, as well as a couple small green peppers, so those got sprayed with olive oil and dusted with garlic powder. We had a couple of garnet yams as well, so those got par-cooked in the microwave and went on the grill too. But, what did I do with the pork tenderloin?
Chile-Lime Garlic Pork Tenderloin

- Nothing like an outdoor grill char
Ingredients
1.5 lb. pork tenderloin (or chicken, or beef)
1/4 c. lime juice
chili powder to coat (about 2 Tbsp)
3-4 cloves of garlic, crushed
2 tsp. olive oil
salt and pepper
Directions
Trim all fat from your protein of choice. Place it in a shallow dish, and sprinkle generously with chile powder. Drizzle olive oil over the meat, and then pour lime juice over it. Coat evenly on both sides, and then rub with crushed garlic. Sprinkle with salt and pepper and allow to marinate while the grill heats up. Grill about 10 minutes on each side for well-done. Enjoy!
I pleasantly surprised myself. This pork was fantastic! When I took my first bite, I actually said “hey, that came out well!” My side dishes were delicious and beautiful (if I say so myself), even though the grilled peppers didn’t photograph well:

After this delectable dinner, I had a remarkable dessert… but more on that later. First, you have to hear about the delicious granola/energy bar that I had today before my Jazzercise class tonight (620 calories burned!) from Krista.

It was called a HealthyWay bar, and for a mere 140 calories, I had more than enough energy to get through my class and cook dinner! It was SO delicious, and I hope I can find something similar here! Adam had one too and said it was great
Also, I was greeted by a package from FoodBuzz! As part of their TasteMaker program, I was asked to try and review some of the new Buitoni pasta products. I can’t wait to cook these up, but since they have mushrooms, gee darn, I’ll have to eat them alone!

- One small hazelnut chocolate chip blondie, supplied by the amazing VeggieGirl (which, by the way, are quite possibly some of the best blondies I’ve ever had!)
- One teaspoon of mocha hot fudge sauce, supplied by the wonderful Krista (which is SO DELICIOUS it will take all of my willpower to not take a spoon to it straight out of the fridge!)
