“Gonna get to ya giiiiirrrrllll.” Yup. NKOTB. What’s it to ya?
When I got home from work today, after a long cloudy day, the sun finally decided to come out for an hour before it started to set, so I actually had GLORIOUS light in my kitchen while I was cooking! I made up my mind that I was going to do something quite Hungry Mouse of me and show you step by step what went into tonight’s fritatta! Since it’s the week of Adam’s birthday, I decided (kind of without telling him) that I would make whatever he wanted for the week. Tonight’s meal was completely his decision, and it was a wonderful one!
I started out by sticking 2 large and one small red potato with a knife, and putting them in the microwave for 5 minutes to pre-cook them. Don’t worry, you’ll see the potatoes in a minute. Then, I chopped up 3 stalks of broccoli into bite-sized pieces
I used all but about 3/4 cup of this. I added it to my SUPER hot cast-iron skillet which was coated with some olive oil spray. To that, I added the pre-cooked potatoes:
I ended up leaving behind about half of one of the larger potatoes because I ran out of space in my pan. While the broccoli cooked down, I chopped up a huge bunch of spinach and tossed it in the hot pan:
It never ceases to amaze me how much spinach shrinks down when its cooked! I added some garlic powder and a little more olive oil at this point, and about 1/4 c. water to steam the veggies. Then I got cracking. Literally. This frittata had 2 whole eggs and 9 egg whites! Here’s the bowl of goo before and after whipping:
Then, the egg fluff went into the pan, and I topped it with some of my favorite reduced fat cheddar cheese:

Just before it went into a 400° oven for about 20 minutes until the eggs were set and the cheese was melted. When I removed the pan from the oven, I was greeted by a toasted cheese smell and this:
I should’ve waited a couple minutes before cutting into it (like Adam suggested) but I didn’t. I cut it into quarters, and scooped out my hefty serving, and gave myself a treat of a side of low fat sour cream:
I love that this was really a slice of vegetables, barely held together with some egg white and a little cheese. It was SO delicious (and the nutritionals didn’t hurt either! About 4.5 Weight Watchers Points® per quarter, which comes out to about 225 calories!) There’s going to be a lovely dessert tonight of warm fat free chocolate pudding with sliced strawberries too
