JUST LOOK AT THIS:

FINALLY!!!
I walked out of work today into warm sunshine, without a jacket on, a warm breeze blowing… this kind of weather just puts me into a good mood instantaneously! I know that some of you would be FREEZING in this weather, but this is just glorious. We had dozens upon dozens of days below freezing this year… and I feel almost like I’ve been re-born. Adam and I are actually going to go get some ice cream (ok, fat free fro-yo) and sit outside just to enjoy it.
I picked up some organic Nasoya tofu yesterday, and decided to bake it up GC Style with some DELICIOUS rice noodles and broccoli. First, I pan-roasted my broccoli. This is a very easy process with fresh broccoli! Just heat a pan on the stovetop, toss the broccoli in, and stir it a few times unti its cooked and browned. I then boiled some Thai rice stick noodles, tossed them in with the broccoli, and stirred in this sauce:

I swear, I'm addicted to this stuff!
Spicy Soy Ginger Sauce
Ingredients
1 Tbsp. dark sesame oil
2-3 Tbsp. dark soy sauce
1/2 tsp. ground ginger
1 tsp. sweetener
1/4 tsp. sriracha
1/2 tsp. garlic powder
Directions
Mix ingredients thoroughly and use in Asian-style noodle or meat dishes instead of, or in addition to soy sauce.
It turns out that this sauce is almost identical to what I put on my GC tofu… I added the garlic for the noodles though. It was all quite simple and quite delicious. I’m debating a second helping of noodles… calories don’t count when eaten outside, right?
