These are enormous too!
For dinner, I made a batch of spicy baked tofu and creamy polenta and sauteed some mushrooms and stirred them into the polenta… IT WAS SO GOOD!!! I love mushrooms, and I think I’ve decided I’m going to use them in things for myself more often!

I was in a super-ginormous funk yesterday, and came to a conclusion: I need a vacation! I’m about 90% sure I’m going to be booking a flight to San Antonio, Texas on Friday after I get paid!!! I have a good friend there, and it’s warmer there than it is here, and thats what I need! I’ll keep you all posted…but just know: there will be some killer eats if I go!

I actually had mushrooms in my salad tonight and thought that I’m going to start using them more often, too! Perhaps in this same exact way, haha.

You aren’t the only one who needs a vacation, trust me! Alas, I don’t see any in my near future.
Those are some crazy looking strawberries. But as long as they taste good, that’s all that matters. And I so need to get off my butt and make polenta, especially since it’s soft!
