Thursdays tend to be “use up the groceries we bought in some sort of meal” days. Sometimes, I have a specific meal in mind, but sometimes I just throw something together, and today was one of those days! I had chicken, sweet potatoes, cauliflower, frozen broccoli, and various other random ingredients. What I ended up creating turned out to be a very, as Adam said, “Potently flavored” meal.
Chicken and Sweet Potatoes
Ingredients
1 lb. chicken breasts, trimmed
2 medium sweet potatoes, peeled
6 cloves of garlic, peeled
1 tsp. cumin
1 Tbsp. olive oil
1 Tbsp. Penzey’s Galena Street Seasoning or other pepper-based meat rub like Montreal Seasoning
Instructions
Cut the peeled sweet potatoes into bite-sized chunks, and place in a baking dish. Drizzle with the olive oil and place the whole garlic cloves randomly on top of the potatoes. Sprinkle with the cumin. Lay the chicken breasts on top of the potatoes and sprinkle with the Galena Street Seasoning (or other meat rub). Cover with aluminum foil and bake at 400* for about 20 minutes. Uncover and cook another few minutes to brown the chicken.
I decided I needed another veggie on top of the sweet potatoes, so I cut up the fresh cauliflower we had in the fridge. Truly out of laziness, I decided to “pan roast” the cauliflower. (I couldn’t find a clean roasting pan). I heated some olive oil, added the cauliflower, sprinkled with garlic powder, and browned it on both sides. Then I added about 1/4 c. water and covered the pan and let it cook about 25 minutes. SO GOOD!!
I’m excited that there’s leftovers so I can bring this for lunch tomorrow! I’m planning on a WW sundae for dessert today too.
In other news, my mom and stepdad are back from their adventure in southeast Asia! I picked them up from the airport today, and they were exhausted, but happy to see me! After I took them home, they were so eager to give me the gifts they got me in the various countries they visited. In a bulleted list form, they brought me:
- a hand-embroidered patchwork bag from Thailand
- hand-embroidered decorative baubles, also from Thailand
- Something called Lao Lao, a very potent rice wine/whiskey, made in a small village in Laos. It came in a very cool bottle with a woven reed case on it.
- a beautiful sterling silver, ruby, and marcasite necklace from Vietnam
- the absolutely cutest keychain ever from the Tokyo airport.
